Sales of one of my favorites, diced butternut squash, increased by 41%, and with its time saving qualities, I can see why.

    When our two daughters were younger and helping in the kitchen, ripping lettuce for salads with their little hands, pinching off the ends of green beans, and peeling carrots, were times of bonding and opportunities to teach healthy cooking skills. However, now with a new phase of our lives , I am enjoying having the option to use pre-cut vegetables.

    1 head thinly shredded Napa cabbage¼ head red cabbage, shredded1 peeled and julienned carrot1 cup thinly sliced snow peas¼ cup fresh basil¼ cup cilantro¼ cup roasted cashews, chopped2 tablespoons black sesame seeds

    • Make sure to add firmer vegetables in the skillet first as they take longer to cook than softer veggies. You dont want perfectly cooked carrots and mushy zucchini!
    • Use a really large skillet so that the vegetables dont get too crowded and can really get that nice caramelization on them. This is my favorite pan to cook pretty much EVERYTHING in and it just so happens to be on sale right now! Non-stick pans are a great choice as well, its just harder to get those browned edges that taste amazing.
    • You really want to use medium-high heat when sautéing veggies to keep them nice and crisp so that any water coming out of them will evaporate quickly and not make your vegetables soggy.
    • Be patient with your veggies and try not to stir them TOO often in order for proper browning.
    • To switch things up, try using a variety of different seasonings, fresh herbs and even a splash of soy sauce or chili-garlic sauce taste amazing!
    • These cooked veggies will last in your fridge in a sealed, airtight container for about 3 to 5 days so this is a great recipe for meal prep!

    Heat oven to 400 degrees F. Meanwhile, place a piece of parchment paper on a large sheet pan with edges. This makes clean up a cinch. Pour a bag of stir fry vegetables on the pan. Roast in the oven for about 15 minutes and then flip them over to brown or caramelize on the other side. Bake longer until browned to your liking.
