BEST VEGAN ALFREDO | Dairy-free Pasta Sauce

Ive owned a lot of blenders, but my Vitamix is definitely the best one Ive owned. This high-speed blender will blend even the toughest of ingredients into pulp. I prefer using my blender to my food processor for sauces like this or homemade hummus, as its much easier to clean the Vitamix. This is definitely one kitchen appliance we use on a daily basis!

How To Make Vegan Alfredo Sauce

The base for the vegan alfredo sauce starts with creating a roux, which is achieved with olive oil, garlic, and either arrowroot powder or all-purpose flour . After some testing, Ive found all-purpose flour yields a creamier sauce, but the gluten-free version isnt far behind.

Plain almond milk adds creamy texture vegan parmesan cheese and nutritional yeast pack in tons of cheesy flavor and garlic powder, salt and pepper add depth and savoriness.

To keep this recipe gluten-free as written, use your favorite gluten-free pasta. I love Trader Joes gluten-free fusilli and spaghetti. But a more traditional noodle to serve would be linguini, which just happens to be my all-time favorite pasta shape.

If You Don’t Like Coconut

If you use full-fat coconut milk, the sauce has a very mild coconut flavor. I also find that organic coconut has a stronger flavor, so you may want to use a brand that is not organic. If you dont like coconut, you can easily replace the coconut milk with 1 3/4 cup plain soy milk and 1/4 cup of any neutral-flavored oil.

If you find that your traditional Alfredo recipe doesnt include dairy, you can try a few different ways to make it without dairy. One option is to replace the milk with vegetable broth or water. How Is Lactose Free Alfredo Different From Dairy

To learn more about the differences in lactose free and dairy-free products, we suggest reading what we previously wrote about the topic. In short, dairy-free Alfredo contains zero dairy products. So instead of milk, you would use something like coconut milk and flour to make the sauce thicker.

On the other hand, a lactose free fettuccine Alfredo sauce still contains dairy milk, but an enzyme is added to the liquid to break down the lactose. You can learn more about how lactose milk is made by reading more about it on our blog!

    Creamy Zucchini Alfredo Pasta

I used zucchini for this that I picked straight from the garden. We have been growing quite a bounty this year and I love getting giant fresh zucchini and squashes. I peeled the zucchini first in this dish just to get rid of the dark green color on mine. Normally, I am all about leaving the skins of my veggies but just for this recipe I peeled them so I could match that rich creamy color of traditional alfredo sauce.

    Can You Freeze Alfredo Sauce

You sure can! After you cook the vegan pasta sauce, allow it to cool completely. Pour the leftover sauce into freezer-safe containers or bags. Seal and leave in the freezer for up to 6 months.

When ready to use, simply transfer the sauce from the freezer to the fridge to thaw 24 hours before cooking with it. If you want to defrost your healthy alfredo sauce faster, place the sealed freezer bag in a bowl of warm water on your countertop until thawed.

Frequently Asked Questions: Vegan Alfredo Sauce

Can Vegan Alfredo Sauce Recipe be prepped ahead?

Yes! You can prepare the sauce according the recipe directions, then store the non-dairy alfredo sauce in an airtight container in the refrigerator for up to 5 days.

Can I freeze vegan alfredo sauce?

If you cant enjoy all of the sauce within 5 days, leftovers can be frozen up to 3 months in a freezer-safe container. To thaw, place the container in the refrigerator for 24 hours. Then, gently reheat the sauce in a small saucepan over medium heat, stirring occasionally to re-emulsify the sauce.

Can I make vegan alfredo sauce without cashews?

You sure can! If you are allergic to cashews or just dont want to use them, you can substitute macadamia nuts, blanched almonds, pine nuts, or raw sunflower seeds with good results. If you can only find roasted, salted macadamia nuts you may want to reduce the salt slightly before blending. Then, taste and add salt as desired.

A Note For Hesitant Coconut Flavor Friends

    Dairy Free Alfredo Sauce Recipe

I am not a huge fan of the taste of coconut. I am just not. I didnt grow up with a lot of coconut flavored anything, and no matter how hard I try, I just cant get used to it. I cant drink it on its own, and I rarely cook with coconut oil other than baking because I dont like the finished taste!

I promise the coconut flavor is completely masked by *all* that butter and garlic. When you get that garlic super fragrant and use amazing butter, the alfredo sauce simply tastes likecreamy, garlicy, amazing alfredo sauce!

    Ingredient Substitutions And Additions

Dont like Cashews? While cashews work the best if you dont love them, I have had luck subbing in raw slivered almonds into this sauce. I would just make sure to soak them a bit longer.

Nutritional Yeast Im not a fan personally, but if you are, you can add it to this sauce for some extra cheesy flavor. If you add it, I would stick with about ¼-1/3 of a cup.

Add Vegetables I am a huge fan of adding things like sauteed mushrooms, spinach, kale, and even broccoli to alfredo. Feel free to add what you like.

Want more spice? Add in a bit of your favorite Italian seasoning for a bit more flare. You can even add a bit of cajun spice to make turn this into a cajun alfredo.

What Pasta Goes With Vegan Alfredo Sauce

I find that wider, thicker pastas like fettuccine, tagliatelle, papperdelle, and linguine go best with this dairy-free alfredo sauce. The thick sauce needs a long, thick pasta that it can cling to.

You can also use pasta shapes that help hold the rich, creamy vegan alfredo sauce in. Pastas such as fusilli and rotini could work.

Ingredients In Dairy Free Alfredo Sauce

In keeping with our monthly theme, this sauce is completely free of nightshades. This being said, if you tolerate them well and would like to add a pinch of cayenne, feel free to do so!

Also, Im not including spices in this list. You can see those in the recipe card below. Dont worry theyre all basic, nightshade free spices.

    • Cauliflower Youll be boiling the cauliflower to soften it, but if youd like to use frozen cauliflower florets, just microwave them instead. The idea is to soften the florets enough to make them easier to puree in the food processor.
    • Onion Yellow or white onion will work just fine. If youre not a fan of onion or you dont tolerate it well, you can leave it out.
    • Broth or Stock Obviously, vegetable broth is the best option, but if you dont need a vegan option, chicken works fine too.
    • Coconut milk/cream This mimics dairy heavy whipping cream perfectly. Otherwise, you can always use any non dairy milk or cream of your choice.
    • Nutritional yeast These little yellow flakes pack a big punch of nutty, cheesy flavor! So naturally, nutritional yeast is perfect for making a vegan and dairy free cauliflower alfredo sauce. If keeping the recipe dairy free and vegan isnt important to you, feel free to use grated or shaved Parmesan cheese instead.

How Do You Make This Dairy Free Alfredo Sauce

In order to make this vegan Alfredo sauce recipe, the first thing you want to do is to soak your raw cashews. In order to do this, you can place in a jar and cover with water for 6-8 hours or overnight. Another option you have is to boil the cashews for 30 minutes. Lastly, if you have a very high powdered blender, like a Vitamix, you dont need to soak in water at all for this recipe.

Once your cashews are ready, you are going to place all the ingredients into a high powdered blender or food processors. Blend until you have a smooth and creamy consistency. If the dairy free Alfredo sauce recipe is too thick, drizzle a little more unsweetened dairy free milk inside until you have reached your desired consistency. Remember, this is supposed to be a thicker sauce as you really want it to coat and stick to those favorite pasta noodles of yours.

Once you have your sauce ready, pour it onto hot pasta noodles or place into an air tight container for up to 1 week and place in fridge until ready to use. This dairy free Alfredo sauce will thicken upon being in refrigerator.
