Ive cooked baked salmon in foil dozens of different ways. While all you really need for a satisfying piece of baked salmon is salt, pepper, and olive oil, the foil method is easy to adapt to different herbs and ingredients. You have plenty of options to keep it exciting and new.
- Baked Salmon in Foil with Lemon and Dill. Follow the recipe below, swapping sprigs of dill for the rosemary. You can also use parsley or green onion or both or whatever other herbs in your refrigerator are threatening to turn brown.
- Baked Salmon in Foil with Lemon and Butter. No fresh herbs? No problem. Leave them out, and brush the salmon with melted butter instead . I dont recommend dried herbs, as they take away from the freshness of the fish.
- Garlic Butter Salmon in Foil. Is there anything on my dinner plate that these two ingredients dont make better? I didnt think so.
- Baked Salmon in Pesto. Omit the rosemary. Smother the top of the salmon with pesto and arrange the lemon on top prior to closing the foil packet around it.

But wait, didnt I read somewhere that salmon is highly toxic and contaminated with mercury and dioxins? It absolutely depends on where you get it. Salmon is marketed as one of natures most potent superfoods, yet most salmon on the market today is farm-raised. And let me be clear: Farmed salmon is on my list of fish you should never eat.
Theres a lot of conflicting information out there in terms of safe salmon sources. Some claim that only 50 percent of the fish in our markets are farm-raised, while others state that it could be much more. But one thing we do know: More than 80 percent of all the fish we eat is imported. The problem with imported sources is that foreign manufacturing standards are not monitored and have been linked to having dangerous levels of:
- Dioxin-like compounds
- Polychlorinated biphenyls
Also, because of the poor nutritional feed they are sometimes given, compared to their wild-caught counterparts, farm-raised salmon:
- Contain just a fraction of heart-healthy omega-3s
- Contain a significant level of toxins, pesticides and antibiotics
- Are fed a dangerous reddish-pink dye in their food to make their flesh an unnatural red color
Additionally, in November 2015, the Food and Drug Administration approved the sale of genetically engineered salmon and does not require any labeling, leaving consumers in the dark.
Despite the numerous health benefits of wild salmon nutrition, farmed salmon is not only less nutritious, but its actually dangerous for your health.

Growing up I would always ask my mom to make this wild Alaskan sockeye salmon recipe on my birthday, and today it is one of our favorites to make for a quick and easy weeknight meal, or when guests come for dinner. While we dont eat a lot of salmon because I would rather choose less popular, wild-caught local options to support our local fish industry, sometimes wild sockeye salmon is just what youre in the mood for!
How To Store And Reheat Leftovers
- You can store baked sockeye salmon in an airtight container in your fridge for about 1 to 2 days.
- You could also freeze it. To freeze your leftovers, remove the skin and place it in a freezer safe zip top bag for about 2 months. When youre ready to reheat it, allow it to defrost first in the fridge overnight.
- Reheat your sockeye salmon slowly and gently so that you dont dry it out. You can do this stove top in a skillet. You can also use your leftovers cold in a salad.

Grilled wild sockeye salmon with tangy honey mustard glaze, is a tasty, healthy meal. This easy 20-minute fish recipe is a keeper!
- 2lbwild sockeye salmon filetskin on, 1″ thick
- 1/2tspground black pepper

- Turn the grill to medium-high and preheat to 450°F.
- In a small bowl, whisk together the honey mustard glaze ingredients and set aside.
- Rinse the salmon fillet and pat dry with paper towel. Brush olive oil over the salmon on both sides keeping skin on. Season with salt and pepper.
- When grill is hot, place fillet skin side down, and grill for 3 to 4 minutes on high so skin becomes golden brown and crispy. Carefully flip salmon over, keeping skin intact, and cook another 3 minutes . IF grill is unavailable, try my Baked Honey Mustard version with instructions .
- Remove from the grill, brush with glaze and let rest for 2 minutes. Serve immediately.

What Is Wild Alaskan Sockeye Salmon
Wild sockeye salmon is different from other salmons in that it is an oilier types of salmon with a deep red color that will be hard to miss if you see if placed next to a sustainably farmed salmon for instance. Sockeye salmon like all other salmons is high in healthy omega-3 fatty acids, and had a strong flavor that holds up well when cooking.
For these reasons, sockeye salmon is a great choice for higher heat cooking methods like grilling, and doesnt need a lot of seasoning or marinating as sockeye salmons flavor is strong enough all on its own.

How Do You Cook Sockeye Salmon Without Drying It Out
No one enjoys dried out fish, salmon or other!
The most important thing to know about keeping sockeye salmon moist is not to overcook it.
I know it sounds overly simplistic and borderline patronizing but its the truth.
Sockeye salmon fillets can be cooked in as little as 7 minutes depending on the thickness.
When Im using frozen wild sockeye salmon from a store that comes packaged pre-cut into fillets, I will set the timer on the oven for 6 minutes and assess at that point.
For an entire filet like this, I knew the thickness warranted extra time so I set the timer to 8 minutes and cut into the salmon at that point to check.
I returned it to the oven for another 3 minutes when I noticed the inside still a bit raw.
You can always cook the salmon longer but you cant take away cooking time.
Another thing to note with sockeye salmon is that it will retain its bright red color when cooked.
Dont confuse the deep color with the fish being raw. I assure you this is salmon is not raw.
The flesh should be bright red like in these pictures and still moist.
Sometimes I think salmon has caught a bit of the bad reputation Brussels sprouts have unfortunately endured with a history of overcooking leading people to believe they dont like the two foods.
Reality is, its the preparation you probably dont like, not the food itself.
