    I like to make homemade cheese balls with Neufchatel cheese , because it has a softer texture. Its never fun having your cracker break when you try to spread hard cheese ball on it.

    Dont worry, light cream cheese doesnt taste light. I dont know how they perform that magic, but they do. Trust me.

    I personally wouldnt recommend freezing this bacon cheddar cheese ball because freezing will drastically change the texture of the cream cheese. It will become too gritty.

    You can refrigerate it up to a week ahead of time without ruining the texture. Tightly wrap your naked cheese ball in plastic wrap. Right before serving, roll it in bacon.
