Cooking at the table is the essence of the hot pot. To do so, you can either go classic-style with a divided pot for serving more than one broth, or if you go simple style with just a single broth, you can hack the hot pot and use a deep sided electric fry pan or your Instant Pot instead.

Because I make this frequently, I invested in a stainless steel divided electric hot pot. You can also find hot pots with grills at their base to grill your meats and seafood before combining with your broth in the pot that sits on top. Hot pots are also available as the pot only that can be warmed at the table on a butane heater or an electric burner.

Other things youll need for your hot pot cooking:

  • Small serving bowls for your diners to load as the food cooks. Keeping the bowls small keeps the soup hot and encourages your fellow hot potters to continue cooking.
  • Chopsticks and soup spoons for slurping and diving for whats cooking. Be sure to use chopsticks designated for eating and those for cooking. Plunging your eating chop sticks into the communal broth is a big no-no.
  • Small strainers for fishing for your ingredients or keeping them contained as they cook.
  • Ladles for serving the individual broth.

Winter is always the best season when you get hot pot eating, either in the restaurants or at home. We have encountered with the strongest cold weather around 4 days ago. Most of southern provinces had their first snow in this winter. In order to warm ourself up, we eat three times of hot pot in those cold days.

No : Thai Curry Hot Pot Broth

The second broth recipe for our hot pot adventure comes from my friend Alis recipe for her Easy Thai Curry Hot Pot, a coconut-based broth similar to the one in my 5 Ingredient Thai Pumpkin Soup recipe, minus the pumpkin.

I only made a couple of changes to Alis recipe, using chicken stock in lieu of vegetable stock, and adding 2 tablespoons of brown sugar and 2 tablespoons of fish sauce similar to the flavors in my Slow Cooker Thai Chicken Soup.

What Equipment Do You Need For Hot Pot

Clear Soup Chinese Hot Pot

You may or may not need to buy chopsticks, strainer ladles, a portable heating surface, and a pot.

There are some portable hot plates that are designed specifically for hot pot that come with both the heating element and a pot in one. Some pots also come with a partition, which is helpful if you wanted to offer two flavors of soup base at once.

If you wanted to save money and space, a fun little life hack is to use your rice cooker or Instant Pot for hot pot instead. Theyre both portable and they can boil and simmer water, which is all you really need.

Using a Rice Cooker for Hot Pot

For a rice cooker, you can leave the lid open, and start out on the cook mode to bring it to a boil, and then you can adjust between the warm and cook modes throughout the meal as needed.

Using an Instant Pot for Hot Pot

For an Instant Pot, you can set it to Saute mode and press Adjust to bump up the heat until it comes to a boil, and then bring the heat down to get it to simmer.

A few notes for both methods:

  • To save time, you can boil the water on your stove and then transfer it over.
  • Since the pot is a lot deeper, you might consider using a deeper strainer ladle to make it easier to cook and find your food.
  • This goes for every type of hot plate, but be careful not to add so much soup that it overflows when its boiling or when you add a bunch of food to the pot, otherwise might potentially damage the heating coils.

How To Hot Pot

Once the table is set, the soup is bubbling in the middle, and you have your own custom sauce made, this is how you do it:

  • Use a pair of tongs to gently place your pieces of choice into the pot go for 3-5 pieces per person.
  • Once everything is in the pot, the bubbling will subside a bit. Let everything come back up to a simmer. If youre cooking thinly sliced beef, you can just give it a gently swish in the bubbling soup until it is cooked to your liking then pull it out immediately.
  • Use a scoop to scoop out the pieces you put in and place them in your bowl.
  • Dip the pieces in your sauce, enjoy, and repeat as needed!
  • Note: for things like tofu and balls or daikon and potatoes, you can just pop those into the pot and let them hang out while its bubbling away. The can just chill out, cook slowly and soak up flavor while youre cooking other items.

    • In a large pot add all the ingredients under the ‘Hot Pot Broth’
    • Boil for 1 hour with lid on medium heat.
    • Once the broth is done, remove the spices, onions, garlic and ginger – the broth is ready to be used. Place the broth in a pot and place it over a portable induction stove and you’re good to go!
    • Note: If the broth was reduced too much , add 1 cup of water into the broth before starting hot pot.

    Silky Hot Pot Broth

    • Rinse the pork hock to remove any bone shards
    • In a large pot add all the ingredients under the ‘Hot Pot Broth’
    • Add the pork hock into the pot with the rest of the ingredients
    • Boil for 2 hours and 30 minutes
    • Skim off any floaty scum bits that floats on top of the broth.
    • Once the broth is done, remove the spices, onions, garlic, ginger and pork hocks – the broth is ready to be used. Place the broth in a pot and place it over a portable induction stove and you’re good to go!
    • Set the pork hocks at the table and snack on them with the dipping sauces.
    • Note: If the broth was reduced too much , add 1 cup of water into the broth before starting hot pot.

    How To Setup It Up

  • Provide each place setting with a small plate with a hot pot scoop, chopsticks, a bowl and napkins
  • Place the cooktop in the middle of the place setting, make sure everyone can reach it easily.
  • Prepare all the ingredients.
  • Wash the vegetables and mushrooms, cut them into smaller pieces if needed.
  • Cut the starchy and root vegetables into small pieces. The thinner or smaller you cut them, the faster they will cook. Hand rip or cut the mushrooms into bite-sized pieces.
  • Soak the vermicelli or glass noodles for 1 minute in cold water.
  • If you are using frozen shrimp or scallops, make sure you defrost them ahead of time, else they won’t cook evenly because of it’s frozen centers.
  • If you are buying pre-sliced hot pot meat, remove it from the packaging and place them plates – if you are using fresh meat, slice them thinly and place it on plates.
  • If you are using fresh chicken or fish, slice them thinly and marinate it in a ¼ tsp of corn starch and some soy, this will prevent it from over cooking and it will make it a silkier texture.
  • When you are plating the ingredients, make sure you group similiar things together. (ie, Place meats with meat only preferably in seperate plates by type, seafoods on their own plates, vegetables can be put together, and balls/noodles/tofu/dumplings can be placed together.
  • How Do You Use Hot Pot Soup Base

    HOT POT SOUP BASE SPICY PICKLE FISH

    Any boiling pot can certainly be made with heat pot soup bases by dissolving the packet and water into the liquid to give hot pot broth the consistency. However, we are also using hot pot soup base for other dishes by being used as a seasoning or sauce for stir fries, where aromatics like cloves and thyme are added as well as pastes and sauces.

    What To Do With Leftover Steamboat/hot Pot Ingredients

    We always have leftovers of something after the steamboat/hot pot party is over. Usually, there will be some protein, noodles, and veggies left. You can turn them into a noodle soup like this. I usually save some chicken broth for this purpose. All I need to do is bring the chicken broth to a simmer then add the protein and veggies. If the noodles are not cooked, put them in last and then bring them to a simmer or until heated through or cooked through . Remember, they dont take long to cook on the stove too.

    Add Ingredients To The Hot Broth

    Once your broth is up to a simmer, it’s time to cook!

    If you’ve got your own mini pot you can just add what you want to eat, cook it, fish it out and eat it. However, you’re not likely to make hot pot this way at home.

    When you’re sharing a large pot, you have to be considerate of the other people you’re eating with. Since everyone cooks their food together , it’s important to either agree to share what’s in the pot, or keep track of what you put in.

    The easiest way to keep track of your ingredients is to either hold each item in with a clean pair of chopsticks, or add the items to a small metal strainer and lower it into the broth.

    Tools And Equipment Needed To Prepare Hotpot

  • Heating devices to cook your ingredients: There are many options to choose from.
    • electric hot pots
    • portable electric cooktop with a wok
    • instant pot using the sauté function
    • deep side electric frying pan.

    The goal is to be able to cook at the table so everyone can cook their ingredients together. The cooking vessel needs to be deep enough to cook the ingredients in and have an adjustable heat level. We are currently using a portable electric cooktop with a deep wok. However, we used to have a dual sided electric hot pot with one side for spicy and one side for the mild broth . We loved this very much and want to get another one soon.

    2. Chop sticks or a tool like tongs to add the ingredients into the pot. We use separate cooking chopsticks for each type of ingredient to avoid cross contamination between the meats, fish and vegetables, etc.

    3. Metal strainers to scoop out all the cooked items. We also like to use a metal noodle basket to cook our noodles, so they dont get lost in the pot.

    4. Ladles to serve a little of the broth.

    5. Setting the Table: Each place setting should have eating chopsticks, soup spoons, little bowls for dipping sauces and small bowls for eating. In addition, lots of napkins, especially if you are not proficient in your chopstick skills.

    How To Set The Table For Hot Pot

    Now that all the shopping and prep is done, its time to set the table.

    • Place the burner and the pot in the middle of the table.
    • Arrange the ingredients around the table.
    • Have a sauce station usually its a little nicer to have the station away from the table since it frees up space. We put all the sauces on the counter and head there when we need refills. Have little dipping bowls to mix up sauce in, sometimes you might even want 2 sauce dishes per person!
    • Place a bowl, plate, chopsticks, and napkin at each setting.
    • Have a couple of plates with tongs and hot pot strainers , and a ladle. Its nice if you have one hot pot strainer per person but if youre good at sharing, you can get away with one between two people.
    • Dont forget the drinks! You can go with beer or if you want those authentic feels, try wine! Wine is crazy popular in China. If youre doing non alcoholic, iced green or jasmine teas or suan mei tang aka cold sour plum tea are good choices.
