While the Blue Box was great back in the day, our tastes have matured to move away from the store-bought mac and cheese. If youve never had made-from-scratch mac and cheese, you are in for a serious treat. We know parents and kids will agree that the real cheddar cheese in this creamy sauce just cant be beat.

Of course, theres no right way or wrong way, so Im here sharing the way I like to make my mac and cheese .

Easy Homemade Mac and Cheese Recipe

Its a straightforward recipe, starting with a basic butter-flour roux that is used to thicken milk to make the cheese sauce. For first timers, I think the short video below will help give you the confidence that youve got this!

The simple trick to avoid lumps in the Mac and Cheese Sauce is to pour the milk in slowly while constantly stirring, then just switch to a whisk if needed to remove any stubborn lumps!

How To Make Old

1. Cook the pasta.

I like to cook elbow macaroni for only 4-5 minutes because it will continue to cook in the oven.

If you cook the pasta until its ready to eat, it will likely turn mushy in the oven.

2. Grease the dish.

This part is important! The pasta will stick to the bottom of the dish if you dont.

3. Combine the cooked macaroni, butter, cheese, salt, and pepper.

Add the ingredients directly to the dish for easy clean-up just be sure you have a tall-sided dish, so nothing spills out.

4. Whisk together the milk and eggs.

This mixture serves as the base of the sauce. When baked along with grated cheese, they turn into a thick and creamy mixture, kind of like savory custard.

Pour the mixture over the macaroni.

5. Bake the dish.

It will need around 40 to 50 minutes at 350 degrees Fahrenheit.

6. Add more cheese!

This step is optional, but I like to add extra cheese and broil the dish for about 3-5 minutes.

7. Serve and enjoy!

Let the dish sit for a few minutes before serving.

For most of my homemade mac and cheese making life, Ive always done the two-pot method one for cooking the pasta, and one for making the cheesy sauce which totally works! But dishes have always been the bane of my existence. AND when I started posting on Instagram about my macaroni and cheese recipe experimenting this month, I heard from many of you who recommended the one-pot method. Because apparently cooking the pasta in the sauce itself releases all of those starches into the saucewhich makes it extra creamyand also helps bind the sauce to the pasta even better. Also, the entire process only takes about 15 minutes to cook. And also, no need to wash the extra pan.

  • Boil a pot of water and cook the pasta according to the package directions.
  • While the pasta is cooking, melt the butter in a saucepan over medium heat and whisk in the flour.

  • Stir in the grated cheese and then add the cooked/drained pasta to the cheese sauce.

    How Long Does It Take To Make Homemade Mac And Cheese From Scratch

    This easy Mac and cheese recipe is on the table in about 10-12 minutes. If youre looking to make the whole recipe in one pot then it will take a bit longer, which is still about 15-16 minutes.

    I like to make the cheese sauce while the pasta is cooking so I can get dinner on the table in a flash but if youre not pressed for time and can spare and extra 8 minutes, then boil the pasta in the pot first. Drain and then make the cheese sauce in the same pot. Still quick, still easy, still creamy deliciousness!

    I like to serve this Super Easy Macaroni and Cheese with a simple salad OR these Fish Nuggets. Sometimes we even like to mix in a bit of these stewed tomatoes. I dont know why but it totally reminds me of my childhood and so we still serve it that way now.

    This weekend, Barclay and I went to a food festival here in Barcelona that was fabulously, deliciously, entirely devoted to CHEESE.

    And it was just about the best thing ever.

    Literally everywhere you turned, ooey gooey cheesy dishes were being served. And youd better believe we took full advantage of them. From freshly-scraped raclette toasts, to the most amazing Korean-inspired mushroom grilled cheese sandwiches, to Spanish onion and smoked cheese soup, to vegan Mexican cheesy quesadillas, to the best ricotta Ive ever sampled, to the most dreamy Italian gyoza-ish dumplings filled with potato and cheese and served in a pecorino-sage saucethe day was all of our cheesiest dreams come true. And we left feeling so happy. And soooo full, ha.
