Ive been exercising a lot lately.
This is shocking, mostly because Ive never been that into exercise. Im decently coordinated, so I was okay at sports as a kid, but I didnt really commit to or become great at anything except karate. And that was only because I quit every other athletic activity up to that point, and when I tried to drop my sensei, my mother decided it was time she put her foot down and refuse to let me be a quitter. I also went to the gym a handful of times, once running 2 consecutive miles , but I just wasnt all that motivated to workout. To make this delicious curry chicken salad, youll need juicy chicken. I like to use shredded chicken, but you can definitely cut the chicken into bite-sized pieces. There are two different methods I recommend for preparing the chicken. Just choose one of them.
Method 1: Add salt and pepper to the chicken breast, sear the chicken from one side in a pan over medium heat until it has browned. Then flip it, add some water to the pan, cover it with a lid and let the chicken cook for 5-10 minutes.
Method 2: Add water to a pot, bring it to a boil, add salt and pepper, add the chicken, reduce the heat, cover the pot and let everything simmer for 20-25 minutes.
When the chicken is cooked through, let it cool and shred the chicken with a fork or cut it into pieces.
Bonus Method: This really isnt a method for cooking the chicken. But you can just buy pre-cooked rotisserie chicken. I like to prepare the shredded chicken myself as I can be sure of how the chicken was raised , but you can definitely just buy it pre-cooked.
