  • Sandwich it between two pieces of bread to make a tasty sandwich
  • Wrap it up in a tortilla with some lettuce for a delicious lunch
  • Serve it on butter lettuce leaves to make delicious low carb lettuce wraps

  • Serve it in a bowl with toasted pita or naan wedges for scooping it up

Is Chicken Salad Healthy

Yes! I personally love that it is naturally balanced in fat, fiber and protein.

I think chicken salad can get a bad rap because it has mayonnaise. Mayonnaise is high in calories and fat, but a little bit goes a long way. I like using avocado or olive oil based mayos and look for brands made with organic eggs and without added sugar. My personal favorite is Primal Kitchens avocado oil mayo.

How To Make Chicken Salad Healthier

Making healthy chicken salad is easier than you think! And if you’re on Weight Watchers, you’ll love it even more! It clocks in at just 2 smart points!

To begin, ditch the mayo. Not only is mayo super high in fat and calories, but it is also easily replaceable!

Instead of traditional mayo, I recommend using 0% greek yogurt! Not only is this a zero point food on the WW system, but it’s also a great probiotic so it’s a win-win!

You should also use skinless and boneless breast meat as it has less cholesterol and fat than dark meat.

And lastly, you might’ve noticed that a lot of curry chicken salad recipes use raisins or dried cranberries for a burst of sweetness. But since those have so many points, we’ll use fresh produce like red grapes which have zero!

I honestly never thought Id type this sentence, but

Ive been exercising a lot lately.

This is shocking, mostly because Ive never been that into exercise. Im decently coordinated, so I was okay at sports as a kid, but I didnt really commit to or become great at anything except karate. And that was only because I quit every other athletic activity up to that point, and when I tried to drop my sensei, my mother decided it was time she put her foot down and refuse to let me be a quitter. Sooooo, I was the karate kid.

I was on the tennis team in high school, but during the other two seasons, I selected the least challenging options to fulfill my sports requirements. I remain extremely grateful that The Taft School still offered Jazzercise in 2005. Doing the grapevine to the Lizzie Maguire soundtrack was right up my alley.Come college, I became a devoted yogi, rolling around and napping on a yoga mat once or twice a week. I also went to the gym a handful of times, once running 2 consecutive miles , but I just wasnt all that motivated to workout. Looking back, I was def carrying around several extra fun pounds and would have benefitted from more essesize, yet I couldnt have cared less. For better or worse, I rocked all manner of revealing spandex/booby shirts and felt JLo sexy most days. Early 20s confidence was the best!

Im also hungry as shit. Mostly at lunchtime.

    How To Make Shredded Chicken

To make this delicious curry chicken salad, youll need juicy chicken. I like to use shredded chicken, but you can definitely cut the chicken into bite-sized pieces. There are two different methods I recommend for preparing the chicken. Just choose one of them.

Method 1: Add salt and pepper to the chicken breast, sear the chicken from one side in a pan over medium heat until it has browned. Then flip it, add some water to the pan, cover it with a lid and let the chicken cook for 5-10 minutes.

Method 2: Add water to a pot, bring it to a boil, add salt and pepper, add the chicken, reduce the heat, cover the pot and let everything simmer for 20-25 minutes.

When the chicken is cooked through, let it cool and shred the chicken with a fork or cut it into pieces.

Bonus Method: This really isnt a method for cooking the chicken. But you can just buy pre-cooked rotisserie chicken. I like to prepare the shredded chicken myself as I can be sure of how the chicken was raised , but you can definitely just buy it pre-cooked.

THE BEST CURRY CHICKEN SALAD RECIPE EVER | HEALTHY, EASY AND DELICIOUS!

Chicken Be sure to use boneless skinless chicken breasts for this recipe. Boil a pot of water and cook the chicken for 15 minutes or until the center reaches 165 degrees Fahrenheit. Remove the chicken from the water, allow it to cool, and cube it into bite-sized pieces.

Vegetables, Fruits, and Herbs For this recipe, youll want to use white onion, celery, and seedless red grapes. Gently fold the grapes in at the end so they do not break apart. Top the chicken salad with toasted almonds, green onion, and fresh cilantro.

Dressing Combine 0% Greek yogurt, mayonnaise, yellow curry powder, cumin, garlic powder, and salt in a large mixing bowl. Mix the dressing well before adding any other ingredients.

    Lightened Up Retro Dish

Curried chicken salad is a retro dish that’s classically made with diced chicken tossed in a creamy mayonnaise-based dressing. The unique flavor of the dish comes from the combination of the warm curry powder spice mixed with sweet fruit chutney and bright lemon or lime juice.

To lighten up the dish, I make my dressing with Greek yogurt and just enough mayonnaise to retain the classic flavor.

Greek Yogurt Curried Chicken Salad With Toasted Almonds

Whenever I’m out to lunch and see curried chicken salad on the menu, I just have to order it! This version of Curried Chicken Salad is an at-home, slightly healthier version of my out-to-lunch favorite. So easy and wildly delicious!

I’m a huge proponent of swapping in greek yogurt for sour cream or mayo wherever possible in cooking. And especially in salads. It’s an easy way to lighten up a dish without changing too much of the flavor or texture.

This Curried Chicken Salad lends itself extremely well to this swap. The curry powder itself can be a bit spicy, so the cool, tangy plain greek yogurt helps to balance out the flavors. Plus, the yogurt naturally lightens up this dish, so that it’s not as heavy on a hot summer afternoon.

How To Make Curried Chicken Salad

Cranberry Curry Greek Yogurt Chicken Salad Homemaker

This recipe comes together really quickly! You can use any type of chicken you have, but I prefer having a mix of light and dark meat, so I most often use a half broken down chicken that includes a breast, thigh and drumstick. I boil those pieces, then remove the skin and bones and chop the meat into rough cubes .Meanwhile, knowing our salad will need a little crunch for texture, I toast up some sliced or slivered almonds and chop celery into small pieces. These elements make the curried chicken salad much more interesting.

Once the chicken is diced and the crunchy ingredients are ready, toss everything into a big bowl with some extra spices, a little scallion or yellow onion and some cilantro, if you’d like. It’s not necessary, but adds a lovely fresh element at the end. I prefer to make this salad in advance and then let it sit in the fridge for at least 20 minutes, but even overnight to let the flavors really combine.

This Greek Yogurt Curried Chicken Salad will quickly become a favorite in your house. Having people over for lunch this weekend? Prep a big batch ahead of time, then serve it up with rolls, toast, or on a bed of lettuce with crackers to dip.

How To Make This Healthy Chicken Salad

Step One: Prep your chicken. This will look different for everyone depending on how you are making the chicken. But, once its cooked, chop up two cups worth of chicken breast and add it to a mixing bowl.

Step Two: Next, add the Greek yogurt, green onion, dried cranberries, celery, chopped cilantro, almonds, lime juice, spices, and seasonings to the bowl. Use a spoon to mix everything until well combined.

Step Three: Thats it! Serve the chicken salad immediately or store in the fridge until you are ready to eat.

Ingredients Needed For Easy Chicken Curry

    • Chicken: I use boneless, skinless chicken breasts chopped into little, about half-inch, squares
    • Substitute: If youre vegetarian, or not a chicken fan, you can use chickpeas instead!
  • Onions: I used 1 ½ onions in this recipe. Onions are one product I always have an ample amount on hand, I put them in everything!
  • Garlic: I used 3-4 fresh cloves of garlic. If you dont have garlic, you can use 1 tsp of granulated garlic. If you dont keep garlic in your spice cabinet, order that -ish right now.
  • Ginger: I used about ½ inch of freshly grated ginger. Ive been on a huge fresh ginger kick with throwing it in smoothies and recipes, like this, wherever I can. If you dont have fresh ginger, you can use 1 tsp ground ginger from your spice cabinet.
  • Curry Powder: Once you have this in your spice cabinet, you will add it to SO much. Joanna Gaines has a phenomenal Curry Chicken Salad recipe that will not disappoint.
  • Red Pepper Flakes: I only used ½ tsp, because I added a decent amount of Sriracha right at the end of cooking. Between those two spices, this chicken curry recipe carries a KICK.
  • Tomato Paste: I only used about 2 tbsp of tomato paste, which is NOT the entire little can!! Want another recipe to use the rest of your paste? My Sausage Tortellini Soup is a great recipe utilizing all shelf-stable and freezer friendly ingredients!
  • Sriracha: Pour as much as your heart desires. Remember, you can always add more. I would say I used about a tablespoon.

How To Make Curry Chicken Salad Without Mayo

    Curry Chicken Salad

If you want to make this without mayonnaise, you have a few options depending on your dietary needs. The most popular option would be to simply use all Greek yogurt instead of the combination of yogurt and mayonnaise. You could also substitute sour cream for the mayonnaise. Vegan mayonnaise is another option and plant-based yogurts work as well. For a completely different spin, you could use mashed avocado. It adds all the creaminess and since the flavor is mild, it’s a great alternative to mayonnaise.

Set a timer and do not walk away from the oven during the last few minutes, as nuts can burn the moment you stop watching. Immediately transfer to a cutting board. How To Make This Recipe

Cranberry Curry Greek Yogurt Chicken Salad

Its really very easy. Stir up the dressing in a large bowl, add the rest of the ingredients, and stir well until everything is coated with dressing. The good part is youll only have one bowl to wash, along with a few measuring utensils.

If you have time, put the salad in the refrigerator for an hour or two. You can eat it right away but its better if the salad has a chance to let the flavors soak in. As a side benefit, the raisins get a little juicier, too.

Garnish with toasted sliced almonds or cashews. A sprinkle of fresh parsley always looks nice, too.

Enjoy! Make it a special occasion by serving it with a glass of white wine. Riesling or Gewürztraminer would be perfect. A homemade cookie is always a good idea, too. Try a snickerdoodle cookie or an iced oatmeal cookie.
