Coleslaw is the easiest recipe ever except for the chopping. I know. I bust out my mandoline slicer to make this process as quick and painless as possible, and to get crisp, uniform slivers. It slices and juliennes like a boss.
If you dont have a mandoline, its time to pony up! j/k. You can totally make this recipe start to finish with your chefs knife, it will just take a few extra minutes. A totally worthy trade for a bowlful of yummy, nutritious slaw that will last for days.
Please dont feel limited to the veggies in this recipe. Swap out half of the red cabbage for green, and try adding julienned radishes, apples, beets, or jicama. For a crunchy topping, experiment with sesame or sunflower seeds. .
This no mayo apple cider vinegar coleslaw is best enjoyed after a few hours of marinating, and keeps in the fridge for about 4 days.

In a medium bowl, combine: mayonnaise, yellow mustard, Italian parsley, apple cider vinegar, granulated sugar, salt and pepper. Mix well.

- The salt and vinegar in the coleslaw dressing start to break down the cabbage and draw the moisture out, so once the dressing is added I recommend that you serve within a couple of hours for best results.
- If you have leftovers it can still be eaten the next day the dressing just becomes runnier.
- Unfortunately it cant be frozen. The overall texture will change too much.
- For make ahead: Mix dressing up to 3 days in advance. Pour over cabbage mixture when ready to serve.

How to Store: It is best to store this vinegar coleslaw recipe undressed and unseasoned covered in the refrigerator until ready to serve. It can stay in the refrigerator undressed and unseasoned for up to 5 days. When ready to serve simply pour the vinaigrette over top, season with salt and pepper, toss and serve.
Also if you want to make it ahead of time, dont plan on seasoning it to the end because if you salt the vegetable it will wilt super quick.
Now just know that when you shave vegetables super thin like I did in this recipe and apply an acid to it, like vinegar, its going to break down faster and become wilted or to put it simply, soggy.
You can substitute honey or agave for sugar in this recipe.
To save some time, If you dont want to slice the cabbages and carrots yourself, then I suggest buying the pre-made coleslaw mix, it will work just as well.

However, a simple cheater method is to just buy shredded cabbage from the store. The carrots are best julienned, but you can shred them if you are in a hurry. Finally, thinly slice the apples and add all of the produce into a bowl.
Prepare the dressing by adding vinegar, mustard, sugar, celery seed, salt, and pepper in a dish and whisk to combine. Pour this over the produce and mix to evenly coat. This can be served immediately, but it can also be made a few days in advance if needed as well.
