How To Make This Ice Cream No Churn
Pour the ice cream into a plastic zip top bag and seal the top. Place it in the freezer and periodically pull it out and mush it around until it is ice cream consistency.
Because this has so much almond milk in it, it is going to freeze hard if you leave it overnight. Just make sure you pull it from the freezer about 20 minutes before you want to serve it.
The reason store bought ice cream is easier to scoop out of the freezer is because of the various gums they add to the mix.

The base recipe can be no churn, sugar free, low carb, keto, and of course vegan.

I must warn you that custard is a bit tricky to make.
1. Mix Vanilla with Almond Milk
Add the vanilla bean paste or 3-4 tablespoons vanilla extract to the almond milk. I dont use the vanilla-flavored almond milk, if you do let me know how it comes out.
2. Cook Milk
Place the milk on the stove in a saucepan. Cook at a low flame and slowly bring to a boil.

Slowly add the hot almond milk to the eggs and beat with a handheld mixer. I cant stress enough that you slowly add the milk otherwise youll get scrambled eggs.

Once the ingredients are all combined, place back on the stove and cook over medium heat stirring constantly. This will take about 14 minutes for it to thicken. It wont get like a custard but rather a runny pudding.
Now, this is super important, place the custard in the fridge until it is cold. You dont want to place it in the Kitchen Aid Ice Cream Maker until it is chilled. You can place it in the freezer if you are in a hurry.
7. Ice Cream Maker Bowl Must be Frozen
Attach your frozen Kitchen Aid Ice Cream Maker bowl on the stand. Place the ice cream paddle into place and set it to stir mode. Mix for 25 minutes until the consistency is like soft-serve ice cream. Enjoy or freeze the mixture in the freezer.

Tips For Making This Easy Almond Milk Ice Cream
- You could easily make banana macadamia milk ice cream instead by using macadamia nut butter, macadamia milk and chopped macadamia nuts instead of the almond ingredients.
- Like most dairy-free ice cream recipes, this vegan ice cream is best served and enjoyed once its been sitting at room temperature for about 15 minutes or so. Youll find that this sitting time really promotes the creaminess in the ice cream.
- If you dont have almond butter, you can use peanut butter instead. I tend to find that peanut butter has a stronger flavor than almond butter so just keep this in mind if you do use this substitution.
- For a more decadent version of this ice cream, consider making a chocolate banana almond milk ice cream by adding ½ 1 tablespoons of cacao powder or cocoa powder.
- Cacao nibs can be used in place of the chocolate chips if you prefer.
- If you have any bananas that you stored in the freezer for making banana bread, those would be great for this recipe. Otherwise, you can also use fresh ripe bananas, but then youll need to first freeze them for a few hours before making your ice cream.
