The salad component of an Indian meal tends to be a couple of pieces of chopped cucumber, a green chilli or a smashed onion relegated to the corner of the thali or an onion-tomato-cucumber salad called kachumber. My version of this salad has the usual suspects but also a few extra ingredients to make it special. Serve a spoonful to liven up an Indian meal or a larger serving as one of the courses for dinner.

Ingredients: THE SALAD

1 large cucumber

2 medium-sized tomatoes

1012 cape gooseberries

2 fresh red chillies

2 tbsp extra-virgin olive Oil

½ tbsp white wine vinegar

1 tbsp honey

½ tsp dried thyme leaves

A pinch of turmeric powder

THE SALAD

Peel the cucumber. Cut it lengthwise in half. Scoop out and discard the seeds. Slice each cucumber half into ¼-inch slices. Cut the tomatoes in half and then into ¼-inch slices. Peel the onion and slice similarly. Pull off the parchment-like capes from the gooseberries and discard. Wash the gooseberries and cut into halves. Slice the red chillies at a diagonal. Toss the prepared vegetables, fruit and chillies together in a large bowl.

THE DRESSING

Whisk the ingredients for the dressing in a small bowl, till thick and creamy.

TO SERVE

Pour the dressing over the salad and toss well. Cover and refrigerate for 1 hour for best results.
