  • 1 Tbsn fresh chopped basil or 1/2 tsp dried
  • 2 tsp fresh thyme or 1/4 tsp dried
  • Salt
  • 1 lb spaghetti or spaghettini
  • 2-3 small zucchini
  • 5-6 mushrooms
  • 1 lb sweet or spicy Beyond Meat Italian Sausages
  • 3 Tbsn red wine
  • salt and pepper to taste

  • Chop onion and garlic finely

Ive essentially taken a spicy sausage pasta recipe sans pork sans dairy but NOT sans flavor. For my non-vegan friends, I swear that you wont be able to tell the difference. I made this for my family when I was home a few months ago and even my die-hard carnivore sister had seconds.

    It grills like pork sausage. Its as well-seasoned as any hot Italian sausage Ive had and the texture is spot on. Heres what took it over the top for me: the snap of the casing as your teeth bite through it. This familiar texture is what plant-based eaters crave just as much as flavor.

    But while I am not here to argue about its healthiness, I do want to point out that I personally believe all vegans should be supporting it, whether you enjoy eating it or not.

    Well, for starters, there will always be food that people view as unhealthy, and we will never see things like hamburgers, hot dogs, ice cream, and pizza take a final bow.     The Beyond Meat website touts a 2018 life-cycle analysis showing that producing its Beyond Burgers generates 90-percent fewer greenhouse gas emissions than regular beef.     This is actually pretty great. So, you know how sometimes a recipe will call for Italian sausages and then have you slice the sausage before or after cooking it? The idea is that you dont want the sausages whole, but instead, you want bits of the meat spread out through the dish.

    Instead of buying sausages for these recipes, you can make your own sausage meat. Then you just add it to the recipes that called for the sliced sausage.

    Its usually for pasta dishes and soups that youll see this. Anywhere that you are hoping to have the sausages kind of crumble up and break apart through the dish, just use the sausage meat instead. It even saves you time since you dont have to slice anything, and the ground meat cooks faster and more evenly than meat shaped into sausages.

    The other thing that you can do with Italian sausage meat is to make Italian sausage patties!

    These are like breakfast sausage patties, but Italian flavored. Theyre wonderful in burgers, or for an Italian-inspired breakfast, or really, for anytime that you want homemade sausages but cant be bothered to get them into casings.

  • Stirfry your vegan sausage along with one sliced onion in some olive oil. I used the Beyond Meat Italian sausage, but any plant-based meat or protein of your preference will do. When onions are translucent, remove along with the sausage and set aside. Retain any liquid that might have released from Beyond Meat sausages in the skillet.
  • Mince a clove of garlic and saute till golden in olive oil at a low heat. Be certain to stir regularly, as garlic can burn within 10seconds if heat is too high, making it bitter and pungent.
  • Sautee peppers, sliced into strips, along with another sliced onion.NOTE: If you are using beyond meat Italian sausages, they would have released quite a bit of liquid, making for a tasty light sauce. If you are using regular soy sausages, or an alternative such as beans or mushrooms, you might wish to add a 250ml cup of vegan chicken stock or a tablespoon of powdered vegan chicken stock dissolved in 250ml a cup of water, along with a tablespoon of tomato paste and a tablespoon of white spirit vinegar / apple cider vinegar to the skillet now, to create your own light sauce.)
  • Sprinkle a teaspoon of mixed italian herbs, or a teaspoon containing a combination of dried thyme, sweet basil and oregano over the skillet. If youd like some extra spice, add a pinch of chilli, adjusting for your preferred heat.
  • When peppers are soft, after approx 15 minutes, return the set-aside sausage and onions to the skillet. Mix well, and allow to warm through.
