Yes! You can definitely prepare this entire meal a few days before and store in the refrigerator. You can also cover with plastic wrap and freeze for up to 4 weeks. This makes dinner as easy as turning on the oven!

To reheat from frozen, allow the casserole to thaw completely. Then bake as normal and dinner is served.

You might wonder how the creamy sauce holds up after it has been frozen. Since everything was mixed together, the dairy will have stabilized and is fine to freeze without worrying about it separating when reheating.

Low Carb Spaghetti Squash Casserole is yet another way to use spaghetti squash. As far as I am concerned you can just about put the kitchen sink into this dish. These are not in the recipe but a cup or two of Caramelized Zucchini would be a terrific addition as well as a cup or two of sautéed caramelized eggplant. Both are great low carb healthy extenders.

As I am a Type II diabetic, all recipes on this website are keto or low carb and diabetic friendly.

  • 1½ Lb 20% Hamburger
  • ½ Medium Onion Chopped
  • ½ C Sliced Black Olives
  • 1 C Heavy Cream
  • 1 T Crushed Italian Herbs
  • 1 T Crushed Garlic***
  • 1 T Chicken Base
  • 3 C Grated Full Fat Mozzarella Cheese
  • ½ C Parmesan Cheese
  • Bake spaghetti squash, cut in half widthwise, scoop out seeds, and with a fork pull out spaghetti strands.
  • Put squash in large buttered glass baking dish.
  • Preheat oven to 325°.
  • Cook hamburger & onion, mix in olives. Set aside.
  • Sauté mushrooms in butter, add to hamburger and top squash.
  • Heat heavy cream, add tomatoes & sauce, herbs, chicken base, and garlic.
  • Remove from heat, cool a little, mix in beaten eggs, and spoon evenly over casserole.
  • Top casserole with mozzarella and sprinkle with Parmesan cheese.

    There are probably a bazillion and one options for breakfast casserole recipes, but in my mind the classic is a low carb egg casserole made with sausage and cheese. From there you can throw in whatever veggies you like .

    Whether you choose to add them in or not, the basic recipe for keto breakfast casserole stays the same. And either way, its a healthy, low carb, and gluten-free staple to have around in the fridge or freezer. In this post I have some pictures with broccoli and some without any veggies.

    If you want to make this low carb breakfast casserole just 1-3 days ahead of time, simply follow all the steps except the baking at the end. You can cover it and store it in the fridge. Then, take it out and let it come to room temperature before baking.

    Its very convenient as a quick meal to have on hand for busy days or just because. My toddler enjoys it, so I like to keep a healthy breakfast casserole on hand for her. It only takes a minute to heat up, lasts all week, and best of all, she loves it. Coconut flour pancakes are her other favorite yum!

    • Riced cauliflower, for example, will cook more quickly than larger florets. Some vegetables also benefit from either being steamed or sautéed before theyre added.

    Lastly, some veggies add a lot more moisture to a casserole recipe. Zucchini is one example. Try squeezing the moisture out of chopped or shredded zucchini or let it dry on a paper towel before mixing it into a casserole.

    Hi, so I tried this for dinner tonight. I poked holes in the squash and put it in the oven for hour. It wasn’t done, so I put it in until it was soft and it came apart like spaghetti. I followed the directions.but the squash was hard. I’m wondering if my squash wasn’t ripe? I’m not sure, I’ve never used spaghetti squash before. I kept the “pizza” in the oven for over an hour but the “noodles”didn’t get soft. The flavor was amazing, I will definitely try this again! My husband ate it with the hard squash and everything, it was very good. Just wondering what I may have done wrong, so when I try again, my squash is soft?Thanks,Christina

    My husband was diagnosed as type 2 last summer. It has really changed the way I do meal planning! Pasta has always been a go-to meal for us, with garlic bread, and maybe a salad. Pepperoni pizza is something we have not had since the diagnosis and I had been longing for one. We will try this with a salad for dinner tomorrow night. It looks yummy.

    • Setting out of the oven: Allow the casserole to sit for about 10 minutes out of the oven to allow it to set. It may seem watery when it comes out of the oven but it should dry up.
    • Dishing it out: Remove from casserole and plate on a serving platter dish and then top with remaining bacon and green onions.
    • Make ahead: You can make this dish ahead of time and keep warm in the oven, cover with tinfoil until you are ready to serve.
