How To Make This Instant Pot Chicken Soup

Altogether this soup is super easy to make without too much hands on action required. Since its all made in the instant pot its going to take only a fraction of the time it would normally take you to get juicy, fall-off-the-bone chicken.

The steps are simple & can be broken down as follows:

  • Cook the aromatics on the saute function.
  • Add your chicken to the bottom of the pot then cover with stock and water. Set the pressure release valve to the sealing position.
  • Cook on high pressure for about 20 minutes, then let the pot depressurise for at least 15 minutes. Use the natural release option before opening the pot.
  • Remove chicken & shred into bite-size pieces.
  • Add chicken back the pot along with your additional soup flavourings

    What Goes Into Italian

    • Aromatics for flavor: The first step to making this soup is to sauté a combination of onion, garlic, carrot, and celery. This combination gives you a base layer of flavor to build on with the other ingredients.
    • The chicken: We like to use skinless, bone-in chicken thighs to make this soup. The bones are important for developing flavor and removing the skin cuts down on fat. When you make chicken soup on top of the stove you have an opportunity to skim off fat as the soup simmers, but since this wont be possible with the Instant Pot, eliminating the extra fat from the skin is key.
    • The vegetables: Diced tomatoes and healthy greens like escarole or spinach are added halfway through the pasta cooking time, lending both extra flavor and nutritional value to the soup. We favor escarole because its a classic Italian ingredient and it holds up a bit better in the soup than more delicate greens like spinach.
    • The pasta: Ditalini is the perfect cut of pasta for this soup. Its a small cut and cooks in the broth while you shred the chicken. You could also use elbows or mini shells.

    There is nothing better than chicken noodle soup made with homemade broth. I know, I knowmaking chicken broth seems like a lot of work. Thats where the Instant Pot comes in pressure cooking makes homemade broth much easier. Now, Im not going to say its as easy as opening a can of Campbells – its not – but Instant Pot Rotisserie Chicken Noodle Soup is worth the extra effort.

    If you dont have a leftover roast chicken, where do you get the get the bones to make broth? I have two quick answers. One is chicken backs. The other is what I’m using in this recipe – a grocery store rotisserie chicken. Grab one from the case at your market, and youre on the way to Instant Pot Rotisserie Chicken Noodle Soup.

    I did some quick research on rotisserie chickens – checking the weight at my local stores – and they varied. Most were about 2 pounds, but Costcos famous rotisserie chickens were closer to 4 pounds. Thats OK – one bird will give you enough bones and meat to make this soup.

    There are only two tricks to this recipe:

  • Save the breast meat for the soup. Pressure cooking the pulls the flavor out of the bones and meat into the broth, leaving the remains spent and dull. Thats why I reserve the chicken breasts, saving them for the soup.

    I did some research on spices that were good for colds.     The turmeric gives the soup such a delicious flavor! Its not too strong, so dont be scared of it. Your house will smell amazing when youre cooking this soup. One word of caution, though, is that turmeric can stain everything! So just dont put your finished soup in a plastic container, and preferably use a paper towel instead of a dish towel to clean up.

    How To Make Chicken Noodle Soup In The Instant Pot

    The secret to good chicken noodle soup is to make the broth from scratch using chicken with skin and bones. My mom always made her soup with a whole chicken, lots of carrots, onion, celery and sometimes a parsnip for more flavor. The end result is always the best and tastiest broth and my favorite part was always the noodles. Oodles of noodles, the more the better.

    This Instant Pot chicken noodle soup is similar but it takes a lot less time and the soup is just as incredible, loaded with tons of flavor.

    I did not use a whole chicken, its not necessary, but youll need about 2 lbs of chicken with skin and bones. You will want at least one chicken breast, so that you have some to shred after to add back to the soup. The biggest advantage of using the Instant Pot to make this soup is of course time. It takes 7 minutes to cook the chicken for that delicious broth.

    Someone asked me if the food cooked in the Instant Pot is bland and I think the exact opposite is the truth. I find the flavors richer and much deeper. When you open that lid after cooking and the aromas hit your nose, you wont be able to wait till you have a taste of this soup.

    One thing to note is I didnt cook the noodles with the chicken on the soup cycle and that is because I didnt want to end up with mushy noodles, noodles cook quick anyway, so I didnt think its necessary.

    What Kind Of Chicken To Use In The Instant Pot

    I use a whole chicken for my soup for a few reasons:

    • First, its the most economical way to go.
    • Second, I like having a mix of white and dark meat.
    • Third, all of the bones and cartilage help to create a rich, nourishing broth.

    You can also use any mix of bone-in drumsticks, thighs, or breast meat. Remove the skin if you like, but I like a little bit of rendered chicken fat in my soup!

    Why Use The Pressure Cooker

    Pressure cooking in the Instant Pot reduces the cooking time a fair amount. Using an electric one also allows you to leave the pot unattended while it cooks. The cooker will even switch to a Keep Warm setting once cooking has finished so you dont have to worry about turning off the cooker right away when the soup is done.

    How To Make Chicken Tortilla Soup

  • Set the Instant pot to the Saute function. Saute onions in the oil while you prep the garlic, carrots and celery. Add them to the pot, and saute.
  • Add the diced tomato, green chilies, chicken thighs , dry black beans , chicken stock, water, salt and all the spices.
  • Give a good stir, and set the Instant pot to pressure cook on high. If using dry black beans, pressure cook 25 minutes. If using canned black beans, pressure cook for 14 minutes .
  • Manually let the pressure out, covering steam with a kitchen towel.
  • Shred chicken thighs with two forks. Squeeze with a generous amount of lime juice and taste for salt, adding more if necessary- especially if you used dry beans, you will need to add more.
  • Divide among bowls and top with tortilla strips, cheese, sour cream, scallions or avocado and cilantro. Add hot sauce for added heat.

    Can I Use Chicken Breasts In This Chicken Soup In The Pressure Cooker

    I used chicken thighs with the skin for this recipe. I think the thighs have more flavor, and when youre sick and barely eating, you need the fat in your diet.

    Fat is good for us, and I am working on including more healthy fats in our diet.

    If you are someone who really doesnt like the skin or thighs, you can remove the skin, and/or use chicken breasts instead for this recipe.

    Just know that you wont have as rich a flavor in the end as you would if using chicken thighs.

    You can use any of the following with NO change to the recipes cook time:

    • raw chicken breasts
    • cooked chicken thighs
    • rotisserie chicken

    So what goes into this soup? I will admit, I dont use traditional chicken soup ingredients. Thats because when I created this recipe years ago I was specifically looking to combine ingredients that have natural healing properties. My kid was sick at the time and I wanted to make a soup he would eat despite not feeling great, and that would help him recover.

    As a result, you wont find rice or noodles in this recipe and you will find herbs and spices known for their healing properties.

    Instant Pot Chicken Noodle Soup

    This chicken casserole is super easy to make with only a few simple ingredients. In a large bowl, combine cream of chicken soup, cream of mushroom soup, long-grain white rice, chicken broth, ranch seasoning mix, bacon, and cheese. Pour rice mixture into a baking dish that has been sprayed with cooking spray. Place chicken breasts on top of the rice mixture. Sprinkle chicken with ranch seasoning. Cover the dish tightly with aluminum foil and bake. Remove the aluminum foil. Top the chicken with bacon and cheddar cheese. Bake for 5 minutes, or until the cheese has melted.

    How To Make Chicken Soup In A Pressure Cooker

    Step 1: Make the Instant pot chicken stock following the directions above.

    Step 2: Heat 1 tbsp of oil in an Instant Pot on the Saute setting. Add chopped onion, carrot, parsnip and celery. Cook for 5-7 minutes, stirring frequently, until softened.

    Step 3: Add in 6 cups chicken stock, salt, pepper, 3 cups chicken meat from the whole chicken and 1 cup egg noodles. Add salt, pepper and thyme .

    Step 4: Close the lid, set to sealing and cook for 2 minutes on manual with quick release.

    Step 5: Make liaison . Liaison is a mixture of egg yolks and cream/yogurt, that is used to thicken soups or sauces. Since Im Bulgarian, I usually use it to thicken chicken and meatball soups and it makes them taste amazing.

    Use 3 tablespoons of full fat Greek yogurt and 1 egg yolk. Whisk until smooth. Add 1 cup of the warm soup broth, whisking constantly to incorporate with the liaison. Then return the mixture to the pot of soup and stir to combine. Serve immediately or refrigerate after cooled to room temperature for up to 2 days.

    Can I Use Boneless Or Skinless Chicken

    Yes. However, please keep in mind that chicken soup and bone broth in general made with boneless/skinless meat wont have the same collagen-infused silky, richness as you would normally get from using bone-in and skin-on chicken.
