Can I Freeze This

This cake freezes brilliantly, which makes it an excellent make-ahead dessert.

The best approach is to bake the cake and let it cool completely. Then, wrap it tightly in plastic wrap to make sure its airtight. Label it with the date and store it in the freezer for up to 6 months. When youre ready to serve, let it thaw out on the counter at room temperature for about 30 minutes. Frost and decorate as desired and enjoy!

If you end up with leftovers, you can also freeze the slices separately and so you can easily have a single serving whenever cravings strike.

I have a little confession, this technically isnt ice cream because there is no cream involved, but dont worry, you wont miss it. Instead of using cream, I used coconut milk. It is creamy and gives the ice cream the perfect coconut flavor.

I use Thai brand coconut milk. You can find it in the Asian section at most grocery stores. I also chill it before combining it with the other ingredients. I just put the cans right in the fridge the night before I want to make the coconut milk ice cream.

No Churn Coconut Milk Ice Cream Directions

You won’t get the same creamy, luscious texture if you make this recipe without an ice cream machine, but it can be done.

Chill a shallow container or a loaf pan in the freezer while you mix the coconut ice cream ingredients.

Pour the ice cream mixture into the prepared pan and freeze for 3-4 hours. Stir the ice cream every 30 minutes for the first 2 hours to help add air. This will help create a creamy, smooth texture.

I suggest adding the toasted coconut on at the very end if you are making this recipe no-churn, or saving it to use as a topping.

Making The Ice Cream Base

Along with the coconut milk, we add a little cornstarch. You can also use arrowroot starch, if you prefer. Either way, you combine the starch with the coconut milk and a sweetener, and then cook it on the stovetop until it becomes thick and almost pudding-like. My friend, there is your ice cream base!

How To Make Banana Ice Cream

Once your bananas are ripe , peel them and cut into pieces. Freeze in a ziploc bag or container.

You can do this step days, weeks, or even months in advance so theres no need to wait when you are ready to make banana ice cream.

To make the nice cream, start by tossing the frozen pieces of about three bananas into a food processor or blender. No need to be exact with measuring, and feel free to double or triple the recipe for a larger serving or to feed a family.

If using a regular blender instead of a high speed one like a Vitamix, or if your frozen bananas are rock hard, add a few tablespoons milk of choice or another liquid.

Blend until the mixture resembles a thick and smooth soft serve texture.

Either transfer to a bowl and enjoy right away, or spread the banana soft serve into a container and freeze for thirty minutes or so to get a firmer ice cream texture.

Usually, I will eat the banana ice cream in a bowl, straight out of the blender, because this option involves no waiting. If you do want the firmer texture, I recommend scooping it out with an ice cream scoop after chilling, for authentic presentation.

    Though the recipe is very easy, you should plan in advance so theres enough time to fully cool and frost your cake. Heres the game plan:

    • Preheat the oven to 350 degrees. Lightly grease your baking dish, line it with parchment paper, and set aside.
    • Combine the coconut milk and vinegar. Let it sit and allow it to curdle, creating a dairy-free buttermilk substitute.
    • Whisk together the dry ingredients in a large bowl to combine. Add the liquid ingredients and stir until incorporated, being careful not to over-mix.
    • Fold in the coconut shreds.
    • Pour the batter into the prepared pan. Tap it gently on the counter to remove air bubbles.

    Homemade Ice Cream Substitute Coconut Cream For Heavy Cream

    So, can we substitute coconut cream for heavy cream in ANY ice cream recipe?

    Maybe, but I suggest that you follow an ice cream recipe made specifically using coconut cream. Here’s why:

    Texture: Because coconut cream has a high water content , it can crystalize when frozen. This can make your ice cream more like a popsicle, which is not ideal!

    To combat this, we use part granulated sugar and part liquid sweetener to keep the coconut ice cream smooth.

    Ingredients: Using coconut cream as a substitute in ice cream recipes will also depend on the original ingredients of the ice cream recipe.

    Many recipes call for both heavy cream and milk. For these, you’ll want to use canned coconut cream as well as canned coconut milk.

    An all coconut milk ice cream base will not be creamy enough, so be sure to use at least half coconut cream.

    Other ice cream recipes use egg yolks to create a custard base. You can use coconut milk and cream in these recipes too, but you may not want to if your goal is to make a vegan coconut ice cream.

    For ice cream recipes that use sweetened condensed milk , you’ll likely want to purchase sweetened condensed coconut milk to make that substitution with.

    What Is Coconut Ice Cream Made Of

    • Coconut milk. Full fat and chilled coconut milk from a can. Do not use coconut milk from a carton or your ice cream wont set.
    • Cashew OR almond butter. I enjoy using almond butter, but the cashew option works. If youd like this recipe to be nut free, you can use tahini or sunflower seed butter.
    • Maple syrup. Adds sweetness with no refined sugar. To keep it keto friendly, use keto maple syrup.
