Gluten Dairy & Egg Free Pumpkin Pie Recipe

Pumpkin pie is the quintessential Thanksgiving dessert. And this pumpkin pie is very likely the most allergen-friendly version I can think of. It is gluten free, dairy free, and egg free. But it is really delicious with all the flavor of classic pumpkin pie. Trust me, no one will miss the gluten, dairy, or eggs!

And it so easy! With the exception of about 10 minutes in the oven to bake the crust, this recipe sets up in the refrigerator, leaving your oven free for so many other things like turkey, dressing, sweet potato casserole and such.

I put a little twist to the crust using ground up gluten free gingersnaps but if gingersnaps arent your thing, feel free to substitute with gluten free graham cracker crumbs or really any gluten free cookie crumbs you like. You could also prepare this is a pre-baked traditional gluten free pie crust.

I used Wholesome Organic sugar for this recipe. You can use regular granulated sugar or coconut palm sugar if you want to lighten the glycemic index on your dessert.

With an elimination diet, the more foods you remove, the harder it can become. And honestly, it can feel overwhelming. Todays blog post is focused on how to go egg free and nut free, after already removing gluten, dairy, and most processed foods.

Changing our food to heal is something that my family is comfortable with, and being gluten free and dairy free is within my comfort zone. However, it has taken time and some diligence. I have been gluten free for about 7 years, and dairy free on and off for 5 years. Once I discovered that I felt better without eating gluten, I learned to become more in tune with my body and how different foods make me feel.

Then when my now 4 year old began struggling with eczema, I knew from experience, and intuitively as a mom, that his diet needed to change in order to heal. Now that Im breastfeeding again and my baby has had some gut issues, I have again adjusted my diet. I am currently not eating gluten, dairy, acidic foods, peanuts, and most eggs. How To Make Low Carb Tortillas

Now all that’s left to do is grab the ingredients and start cooking! Follow the simple steps below and learn how to make keto tortillas.

  • Combine the dry ingredients. Add the almond flour, coconut flour, xanthan gum, baking powder, and a pinch of sea salt in a food processor or blender. Mix all the ingredients until well combined.
  • Add the wet ingredients. Add the apple cider vinegar and blend again. Add the egg and water and blend until the dough formsa sticky ball.
  • Knead the dough. Wrap the dough in plastic wrap to make it easier to work with. Knead the dough for a couple of minutes. Let the dough rest for around 10 minutes.
  • Divide the dough. Cut the dough into 8 equal balls and roll out each piece between two sheets of baking paper using a rolling pin. Each piece should form a 5-inch circle tortilla.
  • Cook the tortillas. Heat a dry pan over medium heat. Once it’s hot, cook each tortilla for 5 seconds on the first side, flip it, and cook for 30 seconds.
  • Cooked tortillas. Place the cooked tortillas in a stack and cover them with a kitchen towel to keep them hot. Alternatively, reheat the cooked tortillas briefly on each side for a few seconds until soft and elastic.

Here are the steps to make these :

  • In a medium sized bowl, stir together the dry ingredients .
  • In a separate bowl, stir together the wet ingredients .
  • Add the Sunbutter mixture to the oat mixture and stir together or mix with your hands until a very thick dough forms.
  • Divide into about 8 pieces and roll into balls. Chill in the fridge to let these firm up.
  • Store in an airtight container in the fridge for up to 1 week.
  • This batch of our protein energy bites is a small-ish one , so if you need more or youre doing a weekend meal prep, you can double or triple this recipe for bites that will last all week!
