These oatmeal cookies are full of dark brown sugar and molasses and are just as sweet and delicious as I remember them. The cookies are made with butter instead of shortening, which gives them a rich, melt-in-your mouth texture. Quick-cooking oats are used in this recipe so they only bake 10-12 minutes which is good for those of us that just can’t wait to get their hands on this delightful treat.

How Do You Make Stem Ginger

First peel the ginger. No. Dont grab your peeler. Just grab a spoon. Ive been peeling ginger this way for years. You simply scrap the tip of the spoon against the ginger and the peel comes right off. Sometimes the stem has knots and its a little difficult to scrap the skin off that part. Thats fine. You can cut those off and save them for grinding up for stir fry or another baking recipe.

After the ginger is peeled, then you thinly slice it. I sliced mine into 1/4-inch-thick slices. I didnt grab the mandoline. I could easily slice the ginger into thin rounds with my knife. It smelled so good slicing up that ginger. I love how it smells fresh from the stem.

When youre finished slicing the ginger, it goes into a pot with water and sugar. Then it simmers. Simmer until the ginger is tender and the syrup is slightly thickened. Remove from the heat and let the ginger cool. I put mine in the jar and put it in the fridge to chill until I was ready to use it.

It’s All About The Butter

In many cookie recipes, including my Levain Chocolate Chip Cookies copycat, you’re going to be looking at a cup of butter for a recipe around this size. This recipe surprisingly uses only half the butter of most recipes.

She also creams the softened butter and brown sugar together, which also makes not only for fluffy cookies but creaming butter makes for even more cookies. And who doesn’t want more cookies?

The best part I believe about this recipe is that it’s no-chill, meaning you don’t need to chill the dough once it’s made. This is because the butter is just softened but it’s not completely room temperature. When butter is warmer in the dough, it spreads the cookie out as it bakes, and it really spreads when white sugar is used in the dough. If you have ever ended up with flat cookies, warm butter and white sugar together are the culprits.

So this dough gives us thick, fluffy cookies without any chill time thanks to the slightly-still-chilled butter and the brown sugar. I told y’all this was science. These chocolate chip cookies are scientifically delicious.

Brown Sugar Instead Of White

In baking, there’s a lot of chemistry going on. It’s totally different from making a stew or pasta dish or something.

Using brown sugar instead of white sugar is key in these cookies. The leavener in them is baking soda. Baking soda, with the help of an acid, lifts baked goods and makes them lighter, resulting in a thick, soft, and fluffier cookie.

The acid used here is the molasses in brown sugar. The entire sugar content in Magnolia Table’s chocolate chip cookies is strictly brown sugar. While white sugar leads to a crisp and strictly sweet cookie, brown sugar has moisture, acidity, and deeper flavor thanks to its molasses content.

So not only does it activate the baking soda and make the cookies fluffy, but it adds moistness and gives depth to the flavor of your cookies. Brown sugar for the win.

How To Make Silo Cookies From Magnolia Bakery

Start by preheating your oven to 350F .

In a separate bowl, combine the flour, salt and baking soda and whisk it around to make sure that the ingredients are evenly distributed.

In a larger bowl, use an electric mixer to cream together the butter, light brown sugar, and granulated sugar.

Youll want it to be light and fluffy, which should take about 2 minutes.

Then, beat in the eggs until combined in the wet mixture.

Add in the vanilla extract and mix until combined in the wet mixture.

Then, gradually add the dry mixture to the wet mixture, continuing to beat throughout the process.

Once the dough has come together and you dont see streaks of flour, pour in the oats, chocolate chips, peanut butter chips, and walnuts.

On a low speed or just with a spoon, mix these ingredients into the dough.

In the original recipe, Joanna suggests to chill the dough already in scooped form, but not everyone has that kind of space in the fridge, so I just put my entire bowl in the fridge for 30 minutes with saran wrap over it.

After 30 minutes, take the dough out and scoop heaping tablespoons of dough onto the baking sheet.

You can roll them into balls for a nicer final look.

If you want an even more authentic bakery look, add some additional chocolate chips or walnuts on top of the dough so that theyll stand out more.

Bake for about 10 minutes or until the cookies have gone golden on the edges.

Take out of the oven and allow to stand on the baking tray for 3-5 minutes.

So, try a pan of a few cookies and if yours dont spread, then press them down. Or just skip the test pan and press them down. It makes them the perfect thickness.

The two kinds of ginger make double ginger oatmeal cookies super delicious. Of course, I love ginger which is why I made them. For those thinking, Isnt the stem ginger spicy? No. I didnt taste any heat from the ginger. And since I finely chopped the ginger and added in with the eggs, the ginger was sort of creamed into the wet ingredients. I did not come across any large chunks of stem ginger in there, either. They disappeared into the cookie and just left their delicious ginger flavor.

Look at that deep golden-brown color. You know these double ginger oatmeal cookies are packed with ginger oatmeal goodness. The pistachios are kind of hidden in there. Theyre a pleasant surprise in these already delicious cookies.

Once youve gathered the necessary ingredients, its time to begin the baking process!

Cream together the brown sugar and butter until combined.

Add in the vanilla extract and egg.

Stir in the oats, flour, baking soda, and salt.

Fold in the chocolate chips.

Drop dough by rounded tablespoons onto a cookie sheet. Space each dough ball about 2 inches apart to allow room for spreading.

Place cookie sheet into preheated oven, 350 degrees, and allow to bake for about 10-12 minutes.

When the tops are done and edges are slightly browned, the cookies are done and ready to be removed from the oven.

Allow to cool slightly before removing from pan.

To thaw, take them out of the containers and let them sit at room temperature so that condensation doesnt form and make them soggy. You can also reheat frozen or thawed cookies in the oven at 275°F for 10 to 15 minutes. This will give them that fresh baked taste and texture.

    Ingredients

    • 1 stick softened butter
    • 1 heaping teaspoon baking soda
    • 3/4 bag chocolate chips

    Preparation

  • Preheat the oven to 350 degrees. Add the brown sugar and butter to a stand mixer and beat on low spread until well combined but still chunky. Add the eggs and vanilla and continue to mix.
  • Next add the flour, salt and baking soda. Start on low speed, increase to medium and then to high speed and allow to mix until ingredients are well combined
  • Add the chocolate chips and mix for a few seconds on medium to high speed.
  • Spoon or place cookies about one inch apart on baking sheet lined with wax paper and bake for 12 to 15 minutes.
