Im not going to lie. This chocolate cake recipe sort of blows my mind. It has beets, zucchini, carrots, pineapple and banana in it! Sweetened with dates, its quite dense and more like an old-fashioned date bread than a chocolate cake. It does have nuts so its a treat food, and its a bit of work, but its so worth it on special occasions. It makes a large pan but freezes well.

Believe it or not, I actually prefer this without the frosting. I love the frosting as a dip for fruit and like the cake as-is so I can really taste the fudgy goodness.
