This On The Border Queso Dip recipe is the best queso dip you will ever try! This smooth and creamy appetizer is filled with melted cheese, chili peppers, tomatoes, and bell peppers making it just like the real queso dip from On the Border. Making it in the Crock Pot makes it even easier since it is just a few minutes of prep and then you throw it all in to cook in the Crock Pot to perfection!

If you have ever visited the Tex-Mex restaurant, On the Border, I hope you ordered their signature queso dip. This queso dip is filled with so much flavor and is very addicting. Most of the time Im not even hungry for the main dish once Im are finished with it. It is a blend of cheeses that includes Monterey jack cheese which is a classic Mexican cheese that gives it a lighter color than just a typical cheddar dip. It is sometimes called Queso Blano, which just means white cheese. Pair it with their crispy thin tortilla chips and salsa for the full experience.

How To Make This Slow Cooker Queso Cheese Dip Recipe

  • To start with, spray a large slow-cooker with nonstick cooking spray and set the temperature to HIGH. Then Add the tomatoes, milk, lime juice, cheeses and cilantro, making sure to mix well. Once all mixed, place the lid on top of the slow-cooker.
  • Then place the oil, onions and jalapeno peppers in a medium skillet set over medium heat. Sauté the vegetables until tender and translucent, about 3-4 minutes. Then, add cumin, red pepper flakes and chili powder stir well and cook an additional 30 seconds, stirring continuously. Finally, add the sautéed vegetables to the cheese mixture and stir well.
  • With everything mixed, replace the lid, making sure to leave the lid slightly ajar. Stir the cheese several times until the cheese is completely melted. After 30 mins, lower the temperature to WARM and stir about every 15-20 minutes. If needed, add a little evaporated milk if it thickens during warming. Serve with your favorite chips/ vegetables/ crackers.

    • Can’t find Velveeta Queso Blanco? No problem! Just go to the deli counter at your grocery store and ask for two pounds of white American cheese. They do not need to slice it. Just ask for it in one big block.
    • This can be made on the stove top. Just put all ingredients in a medium sauce pan, cover and heat on medium-low heat for about 20-30 minutes. Stir frequently until all ingredients are combined and cheese is completely melted and warm.
    • I’m using a cast iron 1.5 quart “party crock” made by Hamilton Beach. I’ve linked a similar one I found on Amazon since I’ve been told the small cast iron crock is hard to find these days. I’m not sure that Hamilton Beach is making this exact product anymore. You can use any 1.5 – 2 quart mini slow cooker for this recipe.

    1| Brown the ground beef in a large skillet over medium high heat, breaking it up into small pieces as its cooking. One of these ground meat choppers really simplifies this step! When the hamburger meat is sufficiently browned, drain off any excess grease.

    2| If youre planning to prepare this Velveeta queso recipe on the stovetop, just leave the browned hamburger in the skillet and dump in 2 cans of Rotel.

    Step 1. Add American cheese, Monterey Jack cheese, bell pepper, diced tomatoes with green chilies, jalapeno, garlic, and onion powder to the slow cooker.

    Step 2. Stir ingredients until combined.

    How To Make Slow Cooker Queso Blanco

    Generally, when making cheese sauce with Kenjis method, I reach for a mixture of cheddars. However, I really love the consistency of white cheese sauce, which is made smoother with the help of a different processed cheese American cheese. I know, you think Im a hypocrite after rambling on about the virtues of real cheese, but dont let me lose you here. Im not generally an American cheese fan myself At least not on its own. But deli-sliced white American cheeses are leaps and bounds more delicious than their single-slice-packaged-counterparts, and they contain less chemicals and additives and more actual cheese. Meanwhile, they still have added ingredients that help give them a smoother, more stable melt, and the creamy flavor is exactly what you want in a good queso dip.

    Not to worry though, we also use real real cheese in the form of Monterrey Jack for this Slow Cooker Queso Blanco recipe, which has a mild flavor similar to cheddar cheese, but is great for melting and is often used in Mexican and Tex-Mex restaurants here in the states .

    Just like with Kenjis method, I toss the cheeses with cornstarch before adding them to the slow cooker. I dont heat the evaporated milk first, though. Instead, I pour the evaporated milk into the slow cooker and heat it all together over low heat for 90 minutes.
