Vegan Breakfast For One
I usually have to wake up at 7am when filming youtube videos and creating vegan recipes with my Edgy Veg Team, so the first thing I do is make some vegan cinnamon coffee! Most days, its just me at home, I make 1 cup of coffee in my espresso maker!
For my cinnamon coffee recipe, I add 1 tsp of cinnamon and 1 tsp vanilla extract into my french press and top with oat milk. As youll see in my video, I had my Edgy Veg team over for a workday, so I made a bigger batch of coffee for everyone in my french press, with cinnamon and the choice of oat milk, soy milk or almond milk! We like to have a variety of plant-based milks at the Edgy Veg HQ.

And a quick melting note: we find that to ensure maximum meltability, it is helpful to either put the cheese right on the skillet to warm/melt, and then scoop it onto the bread. Or else, add a few teaspoons of water into the skillet with the sandwiches and cover to almost steam the cheese to melt. Both work like a charm!

I know that picking up a curry paste from the store is the easiest option, but if you have the time to make your own vegan Thai green curry paste, I promise you wont regret it.

Just remember to dice your sweet potatoes small enough that theyll cook in time.
Or, roast off a whole batch at the start of the week so you can add them to your meals whenever you want!

Mexican Black Bean Salad
For many years before I went vegan or even had it on my radar to do so, I used to eat this salad for lunch every day. And it was so simple: Mixed greens , black beans, corn kernels, diced tomatoes or bell peppers, diced red onion, half an avocado, cilantro, and olive oil. These days, I usually skip the olive oil in favor of a dollop of soy yogurt, but you can top it off however you like. Delicioso!
