I think cheddar cheese works great with the tater tots. It also melts nicely and works in the sauce. You can use a variety of cheeses, or toss in whatever you have on hand though. Soft cheese like goat cheese or cream cheese works just as well as any grated hard cheese. Feel free to experiment a bit!

The cheese not only helps create the flavorful casserole sauce but can also be used to grate over the top of the casserole too. For that reason, you may also want to use a cheese that is easily grated such as cheddar, mozzarella, or even swiss.

This easy recipe is a no-fail family favorite, especially with the kids. Toss frozen tots right into the baking dish, cover with savory breakfast sausage and veggies, pour in eggs, add shredded cheese, and bake. In less than an hour, you are ready to serve a piping hot, fluffy, and delicious casserole for breakfast, brunch, or brinner.

Cheesy tater tot casserole is great to make ahead the night before and pop into the oven in the morning. Its even a fantastic freezer meal as well!

How To Reheat Breakfast Casserole

To reheat breakfast casserole:

  • Microwave: warm individual servings on a microwave safe plate in the microwave for about a minute or until warmed though. I like to cut my slice in half before microwaving so it warms evenly.
  • Oven: you can reheat the entire pan by covering with foil and baking at 350 degrees F for 20 minutes or until heated through .

To Freeze Breakfast Casserole After Baking:

Note, the tater tots wont be as crispy, but still tasty once thawed.

  • Let casserole cool completely. It is best to let it chill overnight in the refrigerator before freezing.
  • Freeze the entire baking dish by covering the casserole with two layers of plastic wrap followed by a layer of foil OR portion the casserole into small servings and transfer slices to sealable plastic bags or small airtight containers.
  • Freeze for up to 2 months.
  • You can reheat individual servings straight from frozen on a microwave safe plate.
  • To reheat the entire casserole, allow it to thaw completely overnight.
  • Cover and bake at 350 degrees F until heated through, approximately 20 minutes.

This easy casserole recipe comes together with just a few easy steps.

  • Bake the tater tots. Arrange half of the tater tots in a greased baking dish. Bake for 12 minutes. Use a drinking glass to smash them down a bit.
  • Make the soup mixture. Whisk together the mushroom soup , peas, carrots, milk, 1/2 cup of cheese, and half of the Worcestershire sauce.
  • Cook the beef. Brown the ground beef and onion in a skillet until no pink remains. Drain off the grease, then add in the rest of the Worcestershire sauce and the seasonings.
  • Layer the casserole. Spread the beef mixture over the mashed tater tots, followed by the soup mixture. Top with the remaining frozen tater tots.
  • Bake. Bake the tater tot casserole at 350F for 30 minutes. Top with the remaining cheese and bake for an additional 5 to 10 minutes.

    DIRECTIONS:

  • Preheat oven to 350 degrees F and lightly grease a 9X13-inch baking pan.
  • In a medium bowl, whisk together eggs, half and half, salt, pepper, and garlic and onion powder.
  • Slice sausage into 1/2-inch slices. Add to egg mixture. Season lightly with salt and pepper.
  • In a separate bowl, mix together cheddar and mozzarella cheese.
  • Stir 1/2 of cheese into egg mixture and pour egg mixture into baking pan. Place tater tots evenly on top or egg mixture.
  • Place in oven and bake for 35-40 minutes. Sprinkle remaining cheese on top. Place back in oven for 5 minutes until cheese has melted.

    Cooking Tips For Breakfast Casserole

    • Dont thaw the tater tots. The tater tots will have the best texture if they arent thawed first. If you are making ahead, keep the half of the tater tots for the topping in the freezer until ready to pop the casserole in the oven.
    • Freshly grated cheese please. Use only freshly grated cheeses as packaged cheeses contain anti-clumping chemicals which inhibits their melting ability.
    • Keep proportions. Although you can swap out the meat and vegetables in this breakfast casserole recipe, you will want to keep the proportions the same so there is enough egg mixture to envelop the filling.
    • Bake uncovered. This will allow the tater tots to brown and get crispy!
    • Dont overcook. Keep an eye on the Tater Tot Casserole and dont overbake. The casserole is forgiving but it wont be as creamy if overbaked.

    Why Use Tater Tots And Not Hash Browns

    I prefer tater tots for breakfast casseroles myself, not only because I grew up in the land of tater tot hot dish, but also because they are easier to use, crisp up really well, and taste amazing too. Plus super easy. Typically we keep dehydrated hash browns in the house since those are the kind that crisp up the best on the Blackstone, and frozen tots are easier for this application than re-hydrating and cooking a full batch of browns would be.

    • Bacon – any kind of bacon will work to make bacon bits.
    • Tater Tots – its best if these stay frozen. Of course, if you plan to make this the night before that wont be possible.
    • Salt and Pepper
    • Cheddar Cheese – you can purchase shredded cheese, or shred your own. Also, feel free to substitute colby jack, pepper jack or Monterey jack cheese.
    • Eggs – you can use any type of large whole eggs.
    • Milk – we recommend that you use whole milk or 2% milk.
    • Onion Powder and Garlic Powder – these add so much flavor to the whole dish.
    • Chives – you could also substitute chopped green onions.

    This tater tot casserole was always a hit when I serve it. Its made with breakfast sausage, vegetables, cheese, simple seasonings, and tater tots, of course. Its crazy easy, hearty and filling, and just plain delicious. Theres also no flour, so its a great option for anyone with gluten sensitives.

    Enjoy it the same day you bake it or prep and stash it in the fridge overnight for an even easier breakfast the next morning. Ive been known to serve it for dinner, too. We all love it.

    • Preheat oven to 350 degrees and grease a standard casserole dish . Cook sausage meat according to package instructions.

The ground pork sausage that is available in your local grocery store or butcher will work, as will Jimmy Dean brand sausage in chubs as well as their patties or links. Cook patties or links as directed on the package, then chop them into small pieces for the casserole.
    • Using room temperature ingredients helps your casserole to cook quickly and evenly. Set out your ingredients when starting and allow them to warm slightly as you follow the directions.
