Taco Bell Rolled Chicken Tacos – Guac, Salsa & Queso Copycat Recipe

Several years ago Taco Bell had an item on their menu called the Zesty Chicken Border Bowl. This was easily one of my favorite items on the menu but sadly they decided to remove it and it returned. The best part this bowl was the Zesty Sauce that came with it, it was very similar to a spicy ranch perhaps. When trying a recipe for a sauce to go on chicken, it immediately reminded me of the sauce that came with the Zesty Chicken Bowl, so I decided to attempt to re-create these bowls at home. The Zesty Chicken Bowl basically consists of refried beans, seasoned rice, lettuce, cheese, grilled chicken, red tortilla strips, Pico de Gallo, and the zesty chicken bowl dressing.

How To Make A Taco Bell Quesadilla

  • Heat the skillet: Put a large skillet over medium-low heat.
  • Add the sauce: Spread the Taco Bell Quesadilla Sauce over the tortilla shell.
  • Cook the quesadilla: Spray the skillet with some cooking spray. Add the prepared tortilla shell to the skillet, then top it with cheese, chicken, and a little more cheese. Top it with another tortilla shell.
  • Flip: Cook the quesadilla for 2 minutes on each side. I love to cook my quesadillas on low heat and covered.

    Having a taco with a chicken filet instead of a shell is probably blasphemy in some groups, but Naked Chicken Tacos, are actually pretty darn good! Turning the monotony of a pre-cooked diet meal into something you wouldnt even know is good for you!

  • Cook the rice according to the package directions.
  • Place sour cream, buttermilk, ripe avocado, chopped garlic, lime juice, and dry ranch dressing mix into a blender. Puree until smooth.
  • Cook the chicken in a skillet or until cooked through. Then thinly slice the chicken.
  • Shred the romaine lettuce.
  • Run water over the beans to rinse them and drain off excess water.
  • Wash and chop the tomatoes.
  • Make guacamole by mashing the avocado in a bowl and stirring in lime juice, onions, tomatoes, and salt.

    How To Make Chalupa Shells

    In a few simple steps, your chalupas will be ready!

    Heat the Oil

    Add 2 of canola oil to a large skillet and heat to 350 degrees.

    Prepare the Chalupa Dough

    In a large mixing bowl, add the flour, baking powder, salt, and shortening. Use a fork to mix the ingredients together. Add the milk and use your hands or a wooden spoon to mix to form a dough ball.

    Divide and Form Chalupas

    Turn dough out onto a floured surface and roll with a rolling pin flat to smooth. Form dough back into a ball. Divide dough into 8 equal sections and roll each section into a ball. Use a rolling pin to roll each dough ball out into a circle about 4 in diameter.

    Fry the Chalupa Shell

    Use a fork to generously poke holes all over the chalupa shell to prevent it from getting too puffy. Use tongs and fold the chalupa shell in half, letting one-half fry in the oil.

    Hold the chalupa into shape until it starts to turn light gold, about 30 seconds.

    Flip over to cook the other side for 30 seconds.

    Flip, and fry for 15 seconds, then flip one last time and fry for 15 seconds.

    Remove from oil and place on a paper towel-lined plate.

    Repeat with remaining chalupas.

    Some brands just carry more pop culture clout. Taco Bell has kept fans entertained with Mexican Pizza drama and Cantina drag brunches. Cheez-It sees its crackers baked into cakes from Stephanie Izard and teams up for wine collabs. Now, these two brands have announced a new partnership that is guaranteed to grab a lot of attention: the Big Cheez-It Tostada.

    As the name suggests, this new menu item starts with a base of a very Big Cheez-It, which is 16-times larger than a normal Cheez-It, with the same taste and texture. From there, Taco Bell finishes it off tostada-style with seasoned beef, reduced-fat sour cream, diced tomatoes, lettuce, and shredded cheddar cheese.

    “There are few things that everyone can agree on but the iconic flavors from Taco Bell menu items and Cheez-It snacks appeal to all,” stated Liz Matthews, Taco Bell’s chief food innovation officer. “We’re thrilled about this new concept with Cheez-It, which gives our fans the chance to experience the real cheese and crunch they love from both of our brands in a whole new way.”

    One problem: The two new items are available now, but only as part of a two-week limited test run at just one Taco Bell location: 2222 Barranca Pkwy, Irvine, California. Asked when the rest of the country might see it, a Taco Bell spokesperson told me, “As with any test item, there’s no guarantee it will be available nationwide, but when it comes to Taco Bell innovation, we never say never.”
