Theres just something about how rotisserie chickens get slowly roasted, basting in their juices, which makes them so much better than anything I could re-create at home.

And since they are always insanely juicy, you can reheat without worrying about the bird drying out!

You may have steered clear of tamales in the past because of the special dough and the need to steam them in corn husks.

Leftover Rotisserie Chicken And Potato Casserole Recipe

INGREDIENTS

  • Hot Red Pepper Flakes, optional to taste
  • 2 cups diced Cooked Potatoes
  • 2 cups diced Cooked Chicken
  • 1 cup shredded Cheddar Cheese

INSTRUCTIONS

The first step in making this Chicken and Potato casserole is to preheat the oven to 350°F . Then lightly spray an 11 x 7 baking dish with non-stick cooking spray and set aside.

Place a large skillet over medium heat and add the butter to the pan. Once the butter melts, add the mushrooms, onions, and diced peppers to the skillet.

Saute the vegetables until the become tender and lightly browned. This should take about 7-8 minutes.

Next, whisk the flour into the pan. Cook, whisking constantly, for 1 to 2 minutes so the flour tastes has a chance to cook off.

Now slowly pour in the milk, stirring frequently and cook until the mixture becomes thick. This process should take only a few minutes.

Now season the mixture with Kosher salt, freshly ground black pepper and hot pepper flakes to taste. Remove the sauce from the heat and set aside.

Once the vegetables are tender whisk in the flour and then the milk to make a delicious cream sauce.

In the prepared baking dish, add the cooked potatoes and chopped leftover rotisserie chicken. Gently mix so that there is an even amount of each scattered in the bottom of the dish.

How To Make These Chicken Recipes Gluten

If you are following a gluten-free diet due to celiac or gluten sensitivity in general, you can still make them by substituting gluten-free ingredients.

For example, if the recipe calls for all-purpose flour, just go with gluten-free all-purpose flour. If it uses wheat tortillas, your favorite gluten-free tortilla will work.

For penne pasta, a good brown rice and quinoa pasta will do the trick.

For the sliders I havent found a good gluten-free alternative to the Hawaiian rolls yet, however, a gluten-free baguette is fairly easy to find.

If its not necessarily the gluten, but the grains in general that you are avoiding, you can always leave off the bread completely and grab a fork. Add some veggies on the side or anything you want.

Rotisserie chickens from the grocery store or Costco can be a total lifesaver. Yes, you can totally make a homemade rotisserie chicken, which is an even cheaper option. But for $6, the convenience is worth it. Plus, the ones at Costco are HUGE. For our family of four, we can easily have a roast chicken dinner with a couple of our favorite sides and a second dinner using the leftovers. Sometimes there is even enough to make chicken salad for the week or to put on top of some salads with Greek Yogurt Ranch Dressing or Creamy Balsamic Dressing.
