    This Pizza Recipe For One Person Is The Most Adorable Thing Youll Ever ...

    Moving out from my family of 7, one of the biggest adjustments was cooking! In college, I almost never ate out and now that Im out of school, I eat out maybe 1-2x a week depending on how lazy Im feeling!

    I see a lot of lists for meals for one and meals for college students. Many of these lists require things that are hard to get/unrealistic or ingredients that only work for a handful of meals. I decided to compile a list of my favorite recipes, great for only one or two people.

    My criteria:

    • Few ingredients/ingredients you can use for multiple recipes
    • No special appliances other than stove, microwave, oven

    Here are some of my favorite recipes that are budget-friendly and that work well for a single person. I used them throughout college and still use these as a single person! All of these recipes have ingredients you probably already have, or that work well for multiple meals.

    About The Protocols Themselves

    First I wanted to share a little about the specific diet I had to follow, not because Im trying to sell you on it, but because the specific requirements did inform what types of recipes I had to find and the tips that ended up working for me. Ill speak to my results at the end of the post.

    Plus, I DO believe that a good functional medicine detox is a really good thing to do, and I believe THIS approach to a candida/gut health protocol is the right one .

    I started with a 7-day functional medicine detox, intended to help support the liver in detoxifying the body and clean out all sorts of things stashed around the body . I only did the 7-day as a kind of re-set before jumping into my gut health protocol, but really loved how I felt on it and will definitely go back and do the full 21-day at some point.

    You can see the detox diet specifics here, but in general it includes a simple shake for breakfast , a plant-based lunch, and the option for including animal protein with dinner, and theres a list of approved proteins, vegetables, and fats.

    Then I transitioned over to the 3+-month CBO protocol . The diet requirements are similar to the detox, but there are more allowed foods , and I started having a real smoothie for breakfast .

    In both diets you fully cut out dairy, gluten, red meat, sugar, refined carbs, alcohol, and other things like that . I also did a latent food sensitivities test and was cutting out dairy, gluten, and eggs for at least 12 weeks as well.

    What are basted eggs, you ask? Well, friend, prepare to fall in love. It is a super fast and easy way to cook eggs, but strangely flies under the radar. Its somewhere between fried and poached . Basting eggs takes like five minutes total, and you can choose whether the yolks are runny or firm. So lets talk how to baste eggs.

    And then Ill share a recipewhich isnt really a recipe so much as a meal combination that I stumbled upon many years ago in the throes of desperation, trying to avoid yet another meal of cereal and wine.

    Ive already shared my love of brussels sprouts, including this delicious, easy caramelized shredded brussels sprouts .

    So one night, I had a few brussels sprouts sitting in the fridge I knew I could make up, but that wasnt going to cut it for dinner. So I decided to baste up some eggs for a protein kick. What was great was how the egg yolk mixed in with the brussels sprouts. Think of these brussels sprouts like you would a vegetable hash, a wonderful base for eggs.

    And so finally I had a peanut butter chocolate shortbread recipe that I loved and could depend on. The cookies arent too sweet, which is a selling point for me .

    Part of why they arent too sweet is that I accidentally left out the brown sugar once when making them, and I actually think they were more delicious that way .

    You could also omit the chocolate bits and instead melt some dark chocolate and coconut oil, and dip the cookies in that instead. Or do both because Im not the boss of you.

    Risotto With Leek Sage And Bacon

    If you work from home or need a tasty meal for a weekend lunch, this dish is an excellent option if you have leftover bacon from the breakfast or replace it with sauteed mushrooms or smoked tofu.

    • Two sliced leeks
    • One cup of vegetable broth
    • White wine, small glass

    Heat a skillet with oil and add in leeks and sage to saute for two minutes, or until leeks are soft. Pour into the rice and continue cooking for one minute, then pour in the vegetable stock and wine until the contents reach a boil. Lower the heat and cover, then continue cooking until the rice is done.

    If pre-cooked, you can use leftover bacon or toss raw bacon into a small skillet and fry until crispy. Serve the bowl of leek and rice with bacon and fresh, grated parmesan cheese with a dash of black pepper.

    Some of the best recipes result from trying to use up an ingredient, and thats definitely the story of this AMAZING salmon and potato hash.

    Id bought a couple giant salmon filets, but the week kind of got away from me and they were smelling stroooong. I was trying to figure out what to do, since throwing $20 worth of salmon away did not appeal. But just eating the filet itself kind of freaked me out. So I decided to just bake it up and figure it out later.

    Then I got a brainwave about a salmon and potato hash, since I also had a bunch of red potatoes to use up. After looking up a bunch of recipes nothing struck my fancy, so I just made it up.

    And this has become a new fave, a hearty and healthy lunch option that makes great leftovers and is the perfect way to use up leftover salmon.

    The recipe is super flexible, so you can add other veggies or adjust the seasonings based on your mood. Just dont add anything too wet its meant to be dry and get kind of caramelized.

    Youll actually notice through this recipe that I alternate between two sets of photos. Ive made this a few times, and once I added in some roasted butternut squash that was just sitting around. Dont let it confuse you!

    I wasnt planning to share any more keto recipes, as its not really the focus of this blog and I feel a bit tapped out on what I can do there. But then this amazing and easy almond flour pancake recipe came along andhonestly?? They are shockingly good.

    While I wont tell you that these naturally gluten-free pancakes are just as perfect and fluffy as my basic buttermilk ones , its the first recipe in a while that didnt feel like I was getting a lesser version of what I really wanted.

    These are great just being what they are. Theyre moist, have a little fluff to them, and a really nice texture overall. Theyve got a little sweetness. They pack a punch in both protein and fat, but basically no carbs.

    And you can make a batch of the batter and keep it in the fridge, just making up a few here and there as needed .

    And the best part about these keto pancakes? Less than 15 minutes start to finish, including a 5-minute rest of the batter.

    Cook Your Squash In The Microwave

    First, halve a medium, 2- to 3-pound butternut squash and scoop out its seeds. Wash your seeds until they’re clean and set them on a paper towel to dry.

    Cut each half into three sections and lay the pieces of the squash face-down on a microwave-safe plate. Add a few spoonfuls of water to the plate to ensure there’s enough moisture, cover it with another microwave-safe bowl or splatter guard, and set the cooking time for five minutes.

    The squash should take about 10 to 15 minutes to cook but I recommend checking on it after each five-minute interval since some microwaves are stronger than others.

    Sweet Potato Chickpea Buddha Bowl

    SoIve been chastising myself lately for my diet. Between crazy work schedules, travel, and being on crutches, Ive just been a bit too reliant on Uber Eats and definitely lacking in fruits and veggies. Its kind of amazing I dont have scurvy.

Its definitely an interesting watch, and while I dont completely agree that meat is the devilI grew up on a family-run cow farm, after all, and I also believe that God designed us to eat some meatI 100% agree that weve totally screwed up our food chain in so many ways and that a heavier plant diet is a good thing, and overall it guilted me REAL HARD into really putting on my adult pants today.

    So I did some digging on plant-based diets and found some recipes that I want to try to rotate into my everyday routine. This was the first one I came across that made me go Hmm! The flavor combos are awesome, its easy to make, Im a sucker for a good tahini sauce, and Im hoping itll make an awesome lunch for a couple days this week as well. For a non-pasta vegetarian meal, Im totally on board with this one!
