How To Make Easy Chicken Noodle Soup

This easy chicken soup takes about 30 minutes to make. The SECRET to amping up the flavor happens in the last 2 minutes of cooking. Adding dill and a pressed clove of garlic is what my Mother does for nearly all of her soups and I have adopted this in my own kitchen. It is a brilliant and easy way to make your chicken soup taste fantastic!

  • Cook the Chicken: In a large soup pot, combine water, Chicken Broth, and salt. Bring to a boil then add chicken thighs and cook uncovered 20 minutes.
  • Saute Veggies: In a large skillet saute onion and celery in oil until golden then add to the soup pot
  • Add Noodles and Veggies: Add 1/2 lb pasta and sliced carrots to the pot and cook 15 min at a low boil.
  • Shred Chicken: As the pasta cooks, remove thighs from the pot and shred with forks , then add the chicken back to the pot.
  • Season: In the last 2 minutes of cooking, add Mrs. Dash, dill, and press in 1 garlic clove, and add salt to taste. Simmer another minute then turn off the heat.
  • What Else Goes In Chicken Noodle Soup

This recipe is extremely forgiving in that you can add or take out whatever you like, dont like.

Vegetables: our recipe suggests green beans, corn kernels and spinach. You could also add zucchini, cabbage, pumpkin, sweet potato or potatoes and peas ! You can make it your own.

Noodles: I love using vermicelli egg noodles in our soup, but you can use thin spaghetti, angel hair, a fat noodle or any other type of pasta you like.

As with all cooking, remember to carefully taste test, then season with a little extra salt and pepper if needed.

Can This Soup Be Made Ahead Of Time

Yes, you can make this soup ahead of time and store it in an air tight container in the refrigerator for up to 3-4 days. If you make this soup ahead of time, I recommend waiting to add in the noodles until you are ready to serve. The noodles will soak up the broth as it sits and they may become soggy

Then when youre ready to enjoy the soup, heat it up in a large pot on the stoveop and then add in the dried noodles and cook until the tenderness that you prefer.

    How To Store Leftovers

The Ultimate Chicken Noodle Soup Recipe
    • Allow leftovers to cool completely and transfer them to an airtight food-storage container. Refrigerate for 3-4 days.
    • I dont really recommend freezing this soup as the noodles will not maintain good taste or texture once thawed. What you can do is make chicken soup without noodles and freeze it for up to 6 months! Then, remove from the freezer, reheat in a pot on the stovetop and add noodles once boiling.

Should I Boil Noodles Before Adding To Soup

    Dont over-cook the pasta

To ensure you get it just right, make sure the soup is nearly cooked before adding the pasta. Smaller pasta shapes soak up broth readily so ensure you serve the soup as soon as its cooked. Alternatively, you could cook the pasta separately and add to the soup at the last moment.

Even though were simmering the broth with spices for a few hours, we still like to give all the spices a quick toast before adding to the pot.

To toast the spices, throw them into a dry pan over medium heat, stay close and shake the pan a couple of times to make sure they toast. Youll know when theyre ready when you start to smell them. It only takes two to three minutes.

How To Make The Best Veggie

Lately, when we are out of ideas for what to cook for dinner, this soup is where we turn. We love soups to be hearty and satisfying. For this lemon chicken soup, we add five vegetables.

Theres onion, carrots, fennel, zucchini, and kale! Theres a small amount of pasta in there, too. Its optional, but we found that adding just under a cup of dry pasta to the pot adds just enough to make the soup dinner worthy without being hungry after. By the way, if you love pasta in soup, check out our easy chicken noodle soup.

The trick to making this soup is to cook the vegetables in two stages. The hearty veggies like onion, carrot, and fennel go in first. When they are soft and sweet, we add garlic, herbs and chicken stock. Then simmer for about 20 minutes.

Since the zucchini and kale wilt and soften so quickly, they dont need as much cooking time. Add them at the end with the pasta, which only needs about 10 minutes.

For the chicken, you can use leftover or previously cooked chickensee our whole roasted chicken recipe.

Or if you dont have any on hand, bake a few chicken thighs in the oven. To do it, slide them into a 400-degree oven and roast until they are cooked through. This keeps the chicken flavorful and juicy. You can even use some of the roasting juices in the soup.

How To Make The Best Chicken Noodle Soup

Weve made chicken soup for years and have tried it various ways. Weve even started from a whole chicken before.

Ill take a bowl of satisfying chicken soup any day, but this version is the one we circle back to. Its straight-forward and quick to make.

Its important to use good-quality chicken broth. While I wish we had homemade chicken broth in our freezer all the time, we dont. When reaching for store-bought broth, we go for low-sodium. We also look for a store-bought broth thats darker in color and since I know it usually has more of a backbone, I like to buy boxed bone broth .

In case you are wondering, we use Pacific Foods Bone Broth and also like the stock sold at Trader Joes.

Dont be afraid to season your soup. When it comes to soups, season early and check the seasoning often. Before we add the chicken thighs to the soup, we always check the seasoning level of the broth. If the flavor doesnt pop, add a bit more salt.

Another option is to use fish sauce. It may seem odd, but whenever were tasting something and its just missing that something something, a small dash of fish sauce fixes it. Fish sauce is a major ingredient in our Pho soup recipe.

As for the noodles, you can use whatever you love. We love the lightness of egg noodles, but you can throw just about any pasta into the pot. For another recipe that uses egg noodles, see our easy parmesan buttered noodles.

How To Make Homemade Chicken Noodle Soup:

Make Homemade Chicken Stock ahead of time using a rotisserie chicken, or choose a good brand of store-bought chicken stock.

Sauté veggies. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Sauté for 3 minutes. Add garlic and cook for another 30 seconds.

Add chicken stock or broth. Season the broth with salt , pepper, and a tiny pinch of rosemary, sage and crushed red pepper. I may add another small spoonful of better than bullion chicken or chicken bouillon powder as well, if needed, to taste.

Add noodles and boil. Once boiling, add noodles and cook just until noodles are al dente. If using store-bought noodles, be cautious not to overcook them! Remove the soup pot from heat as soon as the noodles are just barely tender, as they will continue to cook off of the heat.

Add chicken. Add chicken meat from the rotisserie chicken. Taste the broth again and add more seasonings, if needed.

Serve. I love to serve this healthy soup with this easy No Knead Bread or homemade rolls!
