Reames Frozen Egg Noodles arent like your average egg noodle. Theyre mighty because theyre never dried. Its a noodle so thick and hearty, youre gonna want a fork. Every bag comes packed with the power to transform classic family recipes into deliciously hearty dishes. And theyre waiting for you in the freezer aisle.

How To Make Homemade Noodles:

Making fresh pasta dough is really easy.

Start by separating 3 of the eggs. Discard the 3 egg whites or save for another use.

Mix flour and salt in a large bowl. Make a well in the center of the flour add egg, egg yolks, and water then mix until just combined. Pour flour mixture out onto the counter dusted with flour and shape into a ball of dough. If dough is too sticky, mix in enough extra flour to make the dough easier to handle. If dough is too dry, mix in enough water to make the dough easier to handle. Divide dough ball into 4 equal parts.

Roll one-fourth of the dough into a rectangle on a floured surface. Roll the dough as thin as 1/16 of an inch or as thick 1/8 of an inch. Loosely fold lengthwise into thirds. Using a sharp knife cut crosswise into strips 1/8 to 1/2 inch wide, as desired. Dry pasta by laying noodles in a single layer on paper towels for at least 30 minutes, and up to 3 hours.

Break or cut pasta into smaller pieces. Bring a large pot of water to a boil, add noodles then turn down to medium heat after it comes back up to a boil cook 20-30 minutes or until desired doneness. Mix with your favorite sauce. The thicker the noodles are the longer they will take to cook. You can also add them to your favorite soup and cook just like you would in water.

Classic Chicken Noodle Soup With Bone Broth

In this chicken soup recipe, I made what I call my cheater bone broth. I call it that because full bone broth normally takes hours to cook down the bones. You often add extra chopped veggies for flavor and then strain the broth when it is done to remove the bones and extra flavoring agents.

This recipe just calls for bone-in chicken thighs simmered in chicken stock. By cooking the chicken in stock instead of water, your flavor is already halfway there! But by doing the extra step of bone-in chicken you add more flavor and nutrients. You will notice that the chicken broth will congeal when refrigerated. This is not fat! It is from the gelatin in the chicken bones. Once it is reheated it goes right back to liquid.

This Homemade Chicken Noodle Soup recipe is one that you can go back to again and again. It is the one homemade chicken noodle soup to permanently put in your recipe box. It has all the classic flavors you love: sweet slices of carrot, fresh hints of celery, savory pieces of onion, the warm flavor of garlic, and, the star- chicken.

Easy Chicken And Rice Soup

Next add 6 cups chicken broth. Well be adding aromatics like carrots, shallots, and celery to the pot next, which you usually add to a whole chicken and water to make chicken stock. But, since were only simmering for 30 minutes, vs a couple hours, I like using broth instead of water to get tons of flavor really fast.

Next add those aforementioned aromatics: 1 cup each carrots and celery, 1 chopped shallot or onion, plus 1/2 teaspoon each dried thyme and dried parsley, 2 bay leaves, 2 cloves minced garlic, salt, and pepper.

Bring the broth to a boil then place a lid on top, turn the heat down, and then simmer until the chicken is fall apart tender, 30 minutes. Remove the chicken to a plate then shred when cool enough to handle and set aside. By the way, dont be scared to use dark meat in this dish. It really adds so much flavor!

Since going gluten free over a year ago Ive come to terms with the fact that there are certain things I cant eat anymore, and thats fine. These days, replacements can be found for traditional pizza and potstickers my favorite gluten-filled foods though theres been more than one occasion when Ive wandered down the frozen foods aisle gazing wistfully at the fat frozen egg noodles I used to toss into homemade chicken and noodles, wishing I could go back in time for just a little while.

Thick, chewy, and classically comforting, frozen egg noodles plump into near dumplings when dropped into hot, steamy broth and are seriously just, THE BEST. But theyre also made with all-purpose flouruntil now!

How To Make Gluten Free Egg Noodles

Meanwhile make the gluten free egg noodles. I am telling you youre going to flip for these chewy noodles which are a dead ringer for their gluten-filled frozen counterparts!

Start by whisking together 3 whole large eggs plus 1 extra egg yolk with 1 teaspoon salt and 1 Tablespoon water in a small bowl.

Add 2 cups gluten-free flour blend with xanthan gum to a large bowl then make a well in the center and pour in the egg mixture. Using a fork, whisk while gradually adding flour from the outside until a stiff dough has formed.

As I mentioned, Lincoln loved this dish and even got in on the noodle-making action! Until he swatted the bowl and got flour everywhere. Game over.

Scoop the dough onto a heavily floured surface then knead for a few minutes until it comes together in a ball. Cut the dough ball in half then use a rolling pin to roll each half into a rectangular sheet as thin as you can get it. Add flour and flip/rotate the sheet a few times during the rolling process to make sure its not sticking.

Next, use a pizza cutter to cut the dough sheet into 2-1/2 x 1/2 noodles.

Toss the noodles with extra flour so theyre completely coated and wont stick to each other then place in a container.

Noodles = DONE! Not so hard, right?

After the noodles are cooked add the chicken back in plus 1/2 cup frozen peas and 1 cup milk shaken in a jar with 2 Tablespoons gluten-free flour then cook until the mixture is thick and bubbly, 4-5 minutes.

The sauce will thicken as it sits but if youre ready to eat and its still not quite thick enough, you have a couple of options:

  • Let it sit. The sauce thickens over time.
  • Simmer longer. This will allow some of the moisture to evaporate so the sauce can thicken. Avoid simmering too long or youll end up with mushy noodles.
  • Add more sour cream. This will help thicken it but it may then become too tangy. Adjust the seasonings, if necessary.
  • Mix in a cornstarch slurry. Whisk together 1 tablespoon cornstarch and 1-2 tablespoons cold water to form a slurry. Whisk that in, little bits at a time, and simmer until thickened to your liking.

    Add flour to the rectangle of dough before you fold it into thirds.

    You really can make this easy homemade egg noodles recipe with no special equipment. I have never had a pasta maker so I make these by hand. When I first started making them I used a tall drinking glass as my rolling pin. I just floured the glass the same way you would a rolling pin. I dont have a pasta drying rack so I just lay them out on the counter on paper towels to dry.

    They are easy and very inexpensive to make . You can use these noodles in any recipe that calls for egg noodles, making them very versatile. They can be made thick, thin, wide or narrow depending on the capacity you are going to use them. Or just because you prefer them one way or another.

    They dry and cook faster if they are thin. But they are very tasty, however you make them. They do take up quite a bit of counter space when they are drying.

    Tips For Perfect Egg Noodles:

    Dont Be Intimidated This recipe is very forgiving. Egg noodles are not like pie crust or pastry dough where you have to be cautious with how much you handle the dough. You cant over-mix them. If you feel like the dough is too dry you could add a little splash of water or milk. If you feel like its too sticky, add another sprinkle of flour. You really cant mess them up.

    Rest the Dough: Ive found that allowing the dough to rest for 5 minutes before rolling it out, and again after rolling it, makes it easier to work with and keeps the noodles from shrinking as you cut it. Resting is optional, but Id recommend it. Cover the dough with plastic wrap or a light towel while it rests.
