First, preheat the oven to 350 degrees F and grease and flour three 8-inch round pans. I also like to add a circle of parchment paper to the bottom of each pan.

Next, in a medium size bowl, add the cake flour, pumpkin pie spice, baking powder, baking soda and salt. Whisk at least 30 seconds to blend. Set aside.

In another bowl, combine the wet ingredients: add the milk, canned pumpkin, vegetable oil, vanilla extract and espresso dissolved in water. Set aside.

In the bowl of a stand mixer , beat the softened butter until smooth. Add the white and brown sugar and mix on medium speed 5 minutes until fluffy.

Next, add the room temperature eggs one at a time, mixing until the yellow of the yolk disappears.

Add the flour mixture and the milk mixture alternately. Begin and end with the dry ingredients

Mix just until combined- be careful not to mix above medium speed.

Pour the cake batter into the prepared pans. Bake at 350 degrees for 20 to 25 minutes or until a toothpick inserted in the center comes out clean or with just a few crumbs attached. Let cool 10 minutes ini the pans on a wire rack, then turn out.

How To Make Whipped Cream

Homemade whipped cream is the easiest thing in the world to mix up, and it can add so much to a dessert! In today’s recipe, it is the perfect finishing touch.

First, chill the mixing bowl and beaters or whisk attachment in the freezer for 10 minutes. Pour the whipping cream, powdered sugar and vanilla into the chilled mixing bowl, begin beating on low speed gradually increasing to medium high speed.

The cream will thicken after about 1-1 ½ minutes. Mix until you reach soft peak stage. When you lift the whisk attachment from the bowl, you’ll notice the cream lifts to a soft peak that just slightly curls at the tip. When this happens, it’s ready!

How To Make Pumpkin Puree:

I used tinned pumpkin puree to make this vegan pumpkin bread which I get from Sainsburys it can also be found in some Tescos, Waitrose and on Ocado and Amazon. In the supermarkets it is often hidden away in a little American section in the world foods aisles.

If you cant find it however it is also really easy to make your own you just need to halve, de-seed and roast an eating pumpkin or a butternut squash until it is tender then scoop the flesh out of the skin and puree it until smooth.

Roast it at around 200C/400F/gas mark 6. The time it takes will very much depend on how large the pumpkin/squash is so just cook it until the flesh can easily be pierced with a fork.

I dont recommend boiling the pumpkin to cook it as that will make the puree, and therefore the cake, too wet.

What Does A Pumpkin Spice Latte Taste Like

If youve never had a pumpkin spice latte, you first of all have to like the taste of coffee. Although it isnt a strong coffee flavor, there is espresso in a latte. Youll also taste creamy milk and a slight pumpkin flavor from a pumpkin sauce or syrup. Then there is the pumpkin pie spice, which is made up of cinnamon, nutmeg, ginger and sometimes cloves or allspice.

Why You Should Try This Recipe

  • This is a nice, easy recipe its simply a case of mixing together the wet and dry ingredients together.
  • You dont need any special equipment to make it you could use a mixer if you wanted, but a large mixing bowl, a whisk and a rubber spatula will do the job just fine.
  • If youre a fan of pumpkin spice, you must give this cake a go! If you like my pumpkin spice muffins, youll love this Autumnal spiced cake.
  • The coffee, pumpkin and warming spices are a match made in heaven!

How To Make A Pumpkin Spice Latte Cake:

  • Make sure you do trim the cakes as they will be impossible to stack evenly otherwise and youll have a leaning tower of cake.
  • Check the ganache consistency by drizzling at the back of the cake first!
  • Make sure you use gel/paste food colouring suitable for use with chocolate. These are the only ones I recommend and use : Tangerine Food Colour Paste.
  • As always with layer cakes, good tins are a brilliant investment, they really help to cook them evenly. These are the tins I use and would recommend : 7 Deep Tins.
  • To get a smooth finish on your cakes, there are two tools that are SO useful and really good value for money, they are both available from Amazon, the Angled Palette Knife and the Plastic Cake Scraper. Honestly, that scraper is THE best £1.00 cake purchase ever!
  • The sprinkles I used are these tiny leaves, but you could use whatever you fancy.

    Cover Your Pumpkin Spice Latte

    Dye your fondant a lovely, soft orange – this will be the base colour for when you paint it later on! Remove your Pumpkin Spice Latte Cake from the fridge. Measure the length and circumference of your cake, then roll out your Orange fondant so that its larger than your cakes measurements and carefully wrap it around your rolling pin and then unroll it around the cake. Where the Fondant meets itself and overlaps, hold a ruler and cut a clean seam through both layers of fondant with a sharp paring knife and remove the excess. Push the seams together. Trim away the excess at the bottom and top of the cup.

    Three Make The Cream Cheese Frosting

    PUMPKIN SPICE LATTE CUPCAKES – The Scran Line
    • To make the cinnamon cream cheese frosting, beat together unsalted butter, icing sugar, vanilla extract and ground cinnamon until the mixture is smooth and fluffy.
    • Add cold cream cheese and mix briefly just until the mixture is smooth. If you overbeat the cream cheese can turn very runny, so stop as soon as you have a nice smooth icing.

    Homemade Pumpkin Spice Mix

    My homemade pumpkin spice mix is so easy, and the recipe can be found at the bottom of this page.

    The main flavouring you get is cinnamon, but the other spices, particularly the ground cloves and allspice, bring it back out of Christmas and into Autumn nicely. Because it is basically a lot of dried spices, you really dont need too much.

    You can always use less or more than I specify, but thats entirely up to you. This is basically just a bigger version of my Pumpkin Spice Cupcakes. I have sort of increased it and multiplied it to make it a real showstopper!

    How To Make Your Own Pumpkin Pie Spice:

    Pumpkin pie spice blend isn’t readily available outside of the US. In the UK the closest thing we have is mixed spice, but it is a different blend of spices to pumpkin spice so it’s not the best thing to use if you want a true pumpkin spice flavour.

    The good news is that it is really easy to make your own using a few common spices – cinnamon, ginger, nutmeg, cloves and allspice.

    To make it, just mix together 3 Tbsp ground cinnamon, 2 tsp ground ginger, 2 tsp ground nutmeg, 1 tsp ground cloves and 1 tsp ground allspice.

    You can easily halve the recipe if you only want to make a small jar of it, but the homemade pumpkin pie spice will keep in an airtight container for ages and is perfect for using in all your autumnal and festive bakes.

    How To Store & Freeze Your Pumpkin Spice Cake

    Cake will keep in the refrigerator for up to 7 days. The best way is to keep your cake in an airtight container, or completely covered with plastic wrap and foil.

    If you have cake mix left over from the cakes, you can freeze the batter and bake it up to 3 months later.

    To Freeze: Grease and flour a cake pan, just like you would if you were going to bake it, and pour the batter into the pan, cover with heavy aluminum foil, making sure the edges of the pan and foil are sealed together.

    Place in the freezer, and when ready to bake, pull the cake out about 20 minutes before putting it into the oven. Preheat the oven to 350 degrees, and bake for 25 30 minutes, or until a toothpick comes out clean.

    For The Cinnamon Espresso Cream Cheese Frosting

    Pumpkin Spice Latte Cake
    • 2 Sticks unsalted butter, slightly softened
    • 2 packages cream cheese , soften only slightly – Do not use reduced fat or the spreadable cream cheese. It will be too soft.
    • 1 Tablespoon espresso granules dissolved in 2 teaspoons vanilla extract
    • 1 teaspoon cinnamon
    • 6 to 6 ½ cups more if needed, powdered sugar

    Adding Ganache To The Cake

    When adding your ganache to the top of the pumpkin spice latte cake, be sure that youve chilled it thoroughly. Remember what we said about frosting and heat? Heat melts frosting. Your ganache is going to be warm, so the frosting needs to be cold. Cold frosting can stand up to the warmth of the ganache without becoming a mess.
