I pulled a recipe offline to test it out before his birthday. FAIL. So then I tried another popular one. FAILED. Ok so maybe it was me, maybe I just did something wrong. FAILS again. In all fairness, the cakes were actually ok but they needed more sin! More butter, more sugar, moresomething!!

Normally I dont do back-to-back recipe developing/testing/tweaking unless I plan on putting it on my blog but this was one challenge I couldnt turn down. My baby was getting his from-scratch pineapple upside-down cake and it had to be incredible. After making my own versions which were FAILS too LOL I was about ready to go back to my boxed gig but I just couldnt. I DO NOT LET ANY RECIPE WIN, EVER lol. I literally cant stop with a recipe until I get it right. After six cakes my kids were like not again please! lol Thankfully this is a very basic recipe with simple ingredients

So as I was making my final version, I decided to check in with my never-wrong intuition Thats when the idea to use heavy whipping cream AND milk instead of the other liquid combos I had tried Along with some other tips like adding that extra 2 tablespoons of sugar and shortening, whodathunkit! The results? OMG PERFECTION!! It was EXACTLY the texture and flavor I was going for. Soft but dense enough to withstand that heavy, delicious topping! And a rich buttery flavor that wasnt just an afterthought.

I am converted and now LOVE pineapple upside-down cake or at least THIS recipe!

Pineapple upside down cake can last in the fridge for 2 to 3 days. Once you have baked the cake, allow it to cool until it reaches room temperature and then wrap it with plastic wrap and refrigerate it. You can also divide the pineapple upside down cake into wedges and store them separately in airtight glass containers if you like.

Ive been tinkering around with pineapple upside down cake recipes lately and I had yet to find one I liked. For some, the cake was a little too dry others, there wasnt enough pineapple flavor or general pizzazz. I even found one recipe on the internet using dried cranberries in place of the maraschino cherries which is a crime against humanity and threatens the welfare of the world. Yeah, theyre neon red and full of sugar, but maraschino cherries are essential for this cake!

But after some trial and error and pawning the guinea pig cakes to my apartment complexs front office I have found The One. And like when you find your human soulmate, I found my cake soulmate and this is it.

The cake part of this phenomenal piece of heaven is so supremely moist, fluffy and soft with a hint of pineapple flavor. The topping/bottom of the cake is just perfect: gooey, caramelized brown sugary pineapple slices and juicy cherries. The only thing that may be missing from this cake is a heaping scoop of vanilla ice cream. Just sayin.

Tips For The Best Pineapple Upside Down Cake

Make sure you are using a good quality springform pan that you know is reliable. From time to time, people write to me saying their springform pan leaked, butter went all over, and they get upset with me. This is not my fault, peeps. Its your pan that leaked. The solution?

Test your pan with water in it. Does it leak? If so, it will probably leak with the melted butter in it. Dont make this pineapple upside down cake from scratch until you have a pan you trust, simple as that.

This is the 9-inch springform pan I currently use and I have never had it leak with this cake. I have, however, had it leak when I quickly put it together and sealed the latch carelessly. I do recommend it and its been a workhorse with other cakes over the years. I bought it in 2015 and it still looks and works as good as new.

Note that you should wind up with just enough cake batter to fill the 9-inch springform pan 3/4 full. If you somehow wind up with a little extra batter, its better to discard it than overfill the cake pan.

My 7-year-old had never had pineapple upside down cake and she loves pineapple. Whoa. How did that happen?

So I decided to get busy and make a homemade pineapple upside down cake. It turned out to be the best pineapple upside-down cake Ive ever had, and one of the best cakes Ive ever put to my lips.

I think it would be a perfect cake for Easter, Mothers Day, baby and bridal showers, brunch, or anytime you want a cheery, sunny, happy cake!

Its an easy cake to make, and you dont even a mixer. For the cake base, I adapted my favorite buttermilk coffee cake that Ive used for so many cakes, including my Blueberry Muffin and Buttermilk Pancakes Cake, Cranberry White Chocolate Chip Bliss Cake, Peaches and Cream Fluffy Muffin Cake, Cream Cheese-Swirled Cherry and Mixed Berries Cake, and more.

I love this cake base because its fast and easy to make, and the cakes always turn out supremely moist, springy, and fluffy thanks to the buttermilk, sour cream, and oil. That trifecta of moisturizing and tenderizing ingredients makes it impossible to have a dry cake.

Not to mention, the buttery, brown sugary pineapple juice that seeps down into the cake from the slices on top make the cake so soft, moist, and buttery that it just melts in your mouth.

The cake is soft, sweet, with an almost imperceptible tang from the buttermilk that adds another layer of flavor. The pineapple slices add chewiness and texture to the otherwise falling-apart-soft crumb.

A pineapple upside down cake needs a spring form cake pan. A standard cake pan without removable sides makes it almost impossible to remove the cake without it breaking. Also, standard cake pans are just not tall enough for this recipe. There are plenty of times where one pan can be used for another but this recipe is not one of them.

A word of wisdom as you pick out your pan NOT all spring form pans are created equal! All over the internet people are lamenting about leaking pans! I think I have heard it all and seen it all on various other pineapple upside down cake recipes!

A spring form pan is just like any other cake pan. You get what you pay for! So if you buy a shoddy pan it will leak and you will have a big mess in your oven and it will be frustrating. If you buy a good quality pan it wont leak and your cake baking experience will be wonderful! Remember you can also use your spring form pan for cheesecakes, torts and ice cream cakes!

I recommend picking up a good quality Cephalon Spring Form pan. They make nice solid bakeware at a reasonable price.

Tip For Super Moist Cake

Now here is how I accidentally made the moistest pineapple upside-down cake ever.

I made one, was running late, and had to take it to dinner at someones house. In order to transport it, I stuck toothpicks in it all over, like in this picture .

Then I covered it in cling wrap before actually letting it cool . I tucked it in the back seat of my car and headed off while all of that lovely pineapple and brown sugar-scented steam made a futile attempt to evaporate.
