  • Wrap Cheesecake Wrap you cheesecake with plastic wrap and foil. If you cut your cheesecake in slices double up the slices. Make sure to double wrap the cheesecake as this makes sure that air doesnt get into the cheesecake.
  • Label Cheesecake To make sure that you know how long your cheesecake has been in the freezer, make sure to label it. Serve your cheesecake within one month of placing in the freezer.
  • Freeze without topping Do not put the topping on the cheesecake if you are planning on freezing it. The cheesecake will turn mushy. Once your ready to serve, you can top your cheesecake.

How To Prepare The Cream Cheese Filling

Do not attempt to cut corners and reduce the number of steps, there is a reason why we whip the ingredients separately, then fold them together in a particular order.

  • Prepare the gelatin mixture heat together cream and sugar just until simmering, then mix gelatin sheets in. Once everything is mixed, the key here is to bring the mixture down to lukewarm temperature before step 2. Too warm? It will melt cream cheese in Step 2. Too cold? Gelatin will set and will be impossible to mix with the rest of the ingredients. Do not place the mixture into the fridge to speed up the chilling process as gelatin can start to form lumps
  • Whip cream cheese until fluffy, for about a minute. Cream cheese is an interesting ingredient, it won´t get more fluffy or harder if you beat it longer, in fact, it will break and become runny. I suggest using an Electric hand mixer to avoid overbeating. Gently fold whipped cream cheese mixture into the gelatin mixture
  • Whip heavy cream until soft peaks. Make sure heavy cream is very cold or it might be difficult to whip up. While whipping heavy cream, remember that it will go through the following stages: runny, soft peak, stiff peak then it will break and a few minutes later buttermilk separates and you can make butter. For this recipe, make sure you stop at a soft peak so it will be easy to fold the mixture together and keep the mixture fluffy without breaking it. Gently fold whipped cream into the rest of the ingredients

    There are so many different types of cream cheese available and having tried a few different ones I think they all work pretty well.

    Philadelphia is probably the most well known brand in the UK and US and this is obviously great to use. But I mostly use supermarket own brand varieties and they are just as good.

    I would however recommend that you avoid using super savers versions as sometimes they can be a bit bitty and not have the nicest flavour. I would also recommend that you avoid any flavoured varieties.

    Make The Cheesecake Filling:

    Strawberry Cheesecake

    In a large bowl, use an electric mixer on medium speed to combine cream cheese.

    Next, add sugar and sour cream and mix until smooth. Scrape the sides of the bowl with a spatula as needed.

    Add eggs one at a time, mixing after each egg.

    Add the vanilla extract and mix again until smooth.

    Pour mixture over the graham crust.

    Use a spatula to smooth the filling.

    Bake in the oven at 350 degrees F for 30-35 minutes, or until the center is just a bit jiggly. The outside of the cream cheese layer should start to turn a light golden brown color.

    It is okay if it cracks a bit the strawberry topping will cover any cracks.

    Remove the cheesecake and place it on a wire rack to cool for 1 hour. Then, transfer it to the fridge for 3-4 hours.
