    Q: I am lactose intolerant and am planning on experimenting with lactose-free ice cream recipes. I can easily substitute regular milk with lactose-free milk. However, I am having difficulties finding a substitute for the heavy cream, as I have not found lactose-free heavy cream.

    I have read online that 1 cup heavy cream = 3/4 cup milk and 1/4 cup melted butter. I know this works in savory dishes, but am curious if you guys think it could work in ice cream?

    If not, do you have any other substitutes for heavy cream that would either be lactose-free or relatively low in lactose? I do not want the flavor of coconut in my ice cream, so am steering away from coconut milk.

The ice cream with ¼ corn syrup turned out to be creamier than the one with ½ corn syrup. If using corn syrup, add it in Step 6 after you take the custard off the heat.
    • Adding cornstarch like in this recipe. A cornstarch slurry should be added in Step 5 just before you take the custard off the heat.

    Substitutions: You can also use 1 can of regular coconut milk and one can of coconut cream.

    This recipe has not been tested using lite canned coconut milk. Do not use coconut milk from a carton it is too low in fat.

    Egg yolks: Use 4 large egg yolks , or 5 medium egg yolks .

    Vanilla Bean: Use one whole vanilla bean as instructed in the recipe. If you have a choice, try to use a Madagascar vanilla bean, which are perfect for flavoring things like chocolate, coffee, ice cream, baked goods, and of course, ice cream.

    Substitutions: If we don’t have a vanilla bean handy, our substitute of choice is Nielsen-Massey Pure Vanilla Bean Paste. Absolutely amazing stuff!

    Vodka: Alcohol lowers the freezing point of the mixture and prevents the formation of large ice crystals, resulting in a creamier, smoother, more supple ice cream. With no alcohol added, the ice cream will freeze solid.

    Vodka-free Alternative: 2 tablespoons of vanilla extract can be substituted in place of the vanilla bean and vodka.

    If you are concerned about using alcohol in your ice cream, here’s just a little reminder: tablespoon for tablespoon, vanilla extract contains almost twice as much alcohol as vodka.

    Salt: Use table salt or sea salt. Kosher salt doesn’t dissolve as readily in the ice cream mixture.

    Sugar: Use regular white sugar.
