When using sugar, then you will need some more liquid to shape the dough. So you can either use about 1.5 tablespoons of more water to the cookie dough.

Tip 2. Liquid options: Instead of plain water you can also use milk, ghee, butter, or coconut oil for forming dough.

Tip 3. Make sure to use white fine almond flour for this recipe.

There are a few simple swaps to make this bread if you dont have all of the ingredients on hand.

First, you can easily swap the almond flour for cashew flour. I actually find it delicious and a bit sweeter than almond flour. In addition, you can sub sour cream for full-fat Greek yogurt

If you dont have shredded cheddar cheese, another melty cheese like Colby, edam, mozzarella, or gouda will all be delicious in this keto cheese bread recipe.

  • Sweetener I use Besti Monk Fruit Allulose Blend, as it yields the best texture and doesnt dry out the cookies. You can choose another granulated sweetener from the list of approved keto sweeteners , but texture and flavor will vary.

A big issue with many gluten-free loaves of bread is that they are highly processed and not much better for you than most wheat bread. Even without gluten, these highly processed breads may still trigger inflammation or digestive distress.

After playing around with almond flour bread recipes for a few weeks, Im really happy with this recipe. Its similar to the texture of banana breadthick, dense, and ultra-satisfying.

How To Sweeten Keto Chocolate Chip Cookies

Ok, we’ve talked about the best flour substitutes for keto, and now I want to go into a little more detail about the best sweeteners for keto!

If you’ve been following me for a while, you probably know that my absolute go-to for replacing sugar in a keto friendly way is Swerve.

It’s a sugar alcohol with 0 NET CARBS and 0 CALORIES, which makes it perfect for a low carb diet – like keto! Also, it’s as sweet as sugar, which is a crucial detail for selecting the right sweetener for this recipe.

Having said that, Lakanto’s Confectioners Monk Fruit can also be used to make these keto chocolate chip cookies as well.

And the best part is monk fruit is as sweet as sugar – just like Swerve – so you can substitute it on a 1:1 basis with Swerve.

Pure erythritol is only 70% the sweetness of regular sugar – so it won’t make a sweet enough substitute. Thus, it isn’t an ideal replacement for Swerve/Lakanto.

So, in my opinion, Swerve/Lakanto are the best sugar substitutes to use for keto recipes and end up with delicious results.

As a lot of you know, I use confectioners swerve in almost ALL of my dessert recipes…and brown swerve is the perfect brown sugar replacement – which is a key component to these cookies.

So, what I’m saying is, don’t hesitate to pick some of these up. They’re worth the money, and you’ll save yourself a ton of carbs and calories!

How To Make Perfect Keto Chocolate Chip Cookies

I worked hard on this recipe and tested it multiple times. Here are my best tips for getting it right:

  • Start with good almond flour: This recipe wont work with coconut flour, and you need a finely ground almond flour for the best consistency. You may be able to use other nut or seed meals but the texture wont be as fine.
  • Weigh the flour if possible: In testing this recipe, I found that right around 200g of almond flour was just right.
  • Use Swerve Brown: This is hands down the best brown sugar replacement and critical to the cookies. I make note of alternatives in the Frequently Asked Questions but I cant guarantee the same taste or texture with other sugar substitutes.
  • Baking soda, not baking powder: This makes a big difference, as it allows the cookies to spread more during baking. They also brown more nicely and become softer and puffier.
  • Add melted butter: Rather than creaming the butter with the erythritol, you stir melted butter into the dry ingredients. Its easier but it also gives them a chewier texture.
  • Make them a little bigger: You can make smaller cookies and get 24 , but they arent quite as impressive looking. I found that making 18 larger cookies made them deliciously soft and satisfying. It also allowed me to add more sugar-free chocolate chips and some chopped nuts.
  • Bake until just golden: The cookies will be very soft when you take them out of the oven, but they will firm up as they cool.

    Do I Have To Use Almond Flour

    Yes, almond flour is probably the most important ingredient in these shortbread cookies, without the almond flour you wouldnt have a delicious low carb cookie.

    When baking low carb, you replace regular white flour with either almond or coconut flour. For this recipe, almond flour is the perfect consistency and taste.

    Lately, Ive been buying Costcos Kirkland Blanched Almond Flour. Its a 3 lb bag for about $12.00 which is a great price and lasts me a while.

    How To Make Keto Bread

    Before you start prepping to make this low-carb bread recipe, make sure you preheat your oven to 375 F.

    The first thing youll need to do is separate six eggs. Youll only use the egg whites for this keto bread recipe, so feel free to set the yolks off to the side to save for another recipe.

    Add the cream of tartar to the egg whites.

    Using a hand mixer, starting whipping the eggs.

    You can stop whipping once soft peaks are formed.

    Add the almond flour, butter, baking soda, apple cider vinegar and coconut flour to a food processor, blending until well-incorporated.

    Place the mix from the food processor into a bowl and gently fold in the egg white mixture.

    Pour the bread mixture into a greased 8×4 loaf pan.

    Put the loaf pan into the oven and bake for 30 minutes.

    Your loaf should come out just browned on top!

    Allow the bread to cool slightly before cutting into it. Then, serve and enjoy! If you want to enjoy it warm later, skip the microwave and pop a slice in the toaster.

    How Do You Make Keto Chocolate Chip Cookies

    Begin by preheating your oven to 350 degrees. I prefer to bake cookies on a silicone baking sheet as it helps to prevent over baking on the bottom and they ensure the cookies bake evenly. If you do not wish to use a silicone baking sheet lightly spray your pan with cooking spray and set aside. In a small bowl combine the almond flour, baking soda, baking powder and salt in small bowl. Next, beat butter, golden monkfruit sweetener and vanilla extract in stand mixer bowl until creamy.

    Add the egg, beating the mixture on low speed. Gradually pour in the almond flour mixture. Lastly, mix in Lillys Dark Chocolate Chips and chopped nuts. Chill the mixture for at least 30 minutes.

    Using a 1 inch cookie or ice cream scoop drop the cookies onto the baking sheet evenly spaced. Bake for 7-9 minutes or until golden brown and lightly set. Top with sea salt if you desire.

    How To Make Crispy Keto Chocolate Chip Cookies:

    • Bake them for longer. Crispy low carb chocolate chip cookies need to brown just a bit more. Youll want them a darker golden color on the edges.
    • Use erythritol for the sweetener. It crisps up more than allulose does.
    • Omit the xanthan gum. This ingredient makes for a chewy texture, so skip it if you want crispy.
    • Turn off the oven and prop it open with a wooden spoon. Keep an eye on them if you do this so that they dont burn too much, but otherwise keep them in there as long as you can because that little bit of air flow crisps them up perfectly. This makes for extra crispy keto chocolate chip cookies!
    • Theyll crisp up as they cool, so leave them out afterward!
