Vegan Quinoa Chili With A Mediterranean Twist

Ingredients1/2 cup quinoa 1 cup waterExtra virgin olive oil1/2 yellow onion, chopped4 garlic cloves, chopped1/2 large green bell pepper, chopped2 cups chopped canned tomatoes with their juices4 cups low-sodium vegetable broth3 tsp ground chili pepper1 tsp sweet paprika1 tsp ground cuminSalt and pepper1 15-oz can black beans, drained and rinsed1 15-oz can kidney beans, drained and rinsedFresh parsley for garnish1 jalapeno, sliced

Directions

In a small saucepan, combine quinoa and water. Cook over medium heat for about 10 to 15 minutes until the water is absorbed Remove from heat and set aside till later. In a large saucepan or pot, heat 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add onions, garlic, and peppers. Cook for 4 minutes or so, tossing regularly, until softened. Add the chopped tomatoes, broth, and spices. Season with salt and pepper. Bring to a boil.Stir in black beans, kidney beans, and quinoa. Lower heat and let simmer for 25 minutes.Remove from heat. Stir in parsley and jalapeno slices, if using. Transfer to serving bowls. Enjoy!

Happy New Year! Im sharing My Favorite Healthy Recipes for 2023. The new year is here, so lets start it off right with my best wholesome, balanced, and of course, delicious recipes. Ive included all of my favorites everything from breakfast to lunch, to dinner, to desserts. Each and every recipe is delicious, just a little more balanced, and made with plenty of vegetables for lots of nutrients. Im excited to start January off with so much color, and deliciousness. Which of these recipes are your personal favorites?

As I type this, its snowing fluffy white snow outside and it just couldnt be cozier Christmas vacation weather. This is such a special week. Things have finally slowed. Everyone is relaxing and forced to take somewhat of a holiday break, as most of the world shuts down. Its always so nice after such a busy season.

With family here and the snow falling, Ive been making a lot of soups, chilis, and slow-cooked, simple dinners that everyone will enjoy. Some of my coziest recipes! And even though the weather is leaving me craving the coziest food, Im excited to start the week off with a list of wholesome, vegetable-filled recipes. Im actually craving it!

If you picked the latter, youre not alone. Its easy to eat healthily when nutritious foods are at your fingertips, but when your only options are from a vending machine or convenience store, things get tricky.

Luckily, by whipping up your own healthy snacks on-the-go, you can avoid this once and for all. Ive selected some of my favorite treats that are easy to prepare and even easier to throw in your bag. Skip the processed stuff and reach for these instead. Youll never be hunting for healthy snacks for your family again.

Note: I recommend using natural sweeteners like raw honey, real maple syrup or organic coconut sugar to get the most nutrients out of these recipes. Also eliminate conventional cows milk and use coconut milk, almond milk or organic grass-fed goat milk or cheese, replace table salt with sea salt, and replace canola and vegetable oil with coconut oil, olive oil or ghee. Replace olive oil with avocado oil when cooking at a high temperature.
