You will need:

  • Heavy Whipping Cream and
  • One bag frozen berries, or any other frozen fruit. You may also use fresh fruit, but you will need to cut it up into 1 to 2-inch pieces and freeze it before making the ice cream.

For best results, you want to use a high-power blender, like Blendtec, but this does work with regular blenders, too. I have also used a food processor, and that worked, as well. HOWEVER, you might need to add a little more liquid to get it to blend.

  • Pour out the frozen fruit into the blender. If using a sweetener, sprinkle it on top of the berries inside the blender.
  • Process/pulse just until the fruit is roughly chopped.
  • Pour in the heavy cream, and continue to process just until everything is incorporated. Scrape down the sides with a spatula, as needed.
  • And thats it! Scoop it out and eat. OR freeze it for later.
  • My favorite way to eat it is soft serve, straight out of the blender as soon as its done, but you can also freeze it so it is firm enough to scoop out and serve in cones.

    Homemade Ice Cream Part Two: Fruit Ice Cream

    In my last post, we talked about how easy it is to make ice cream, and how much better it tastes than store-bought. We talked about how most flavors are a variation of your basic vanilla, and how you can use that basic ice cream recipe to make all kinds of other flavors like mint, Earl Grey, basil, cinnamon, lavender, you name it.

    So far, so good, right? Have you made ice cream yet? Please, please do. Its easy. Youll enjoy it.

    Okay so today were going to talk about fruit ice cream. As I said in that last post, fruit ice cream is one step more complicated but only that.

    You might think that you could simply add cut up fruit to your vanilla ice cream base and you could. But because fruit has a lot of water, youll end up with icy chunks of fruit disrupting your otherwise-smooth-and-creamy ice cream experience.

    So instead, you simply cook the water out of the fruit.

    Meanwhile, make your vanilla base. Chill both thoroughly, probably overnight. The next day, mix them together, then process in your ice cream maker.

    Ta da.

    But heres whats really cool. Between this post and the last one, weve established two things: 1) a basic ice cream base can be infused with vanilla bean to make vanilla ice cream but also with just about anything to make any base flavor you want, and 2) to make a fruit flavor, you simply cook the fruit down to a jam and add it to your base.

    Nice, right?

    Strawberry Ice Cream Recipe

  • Place the strawberries in a large bowl. Use a potato masher, a fork, or a wooden spoon to crush them. Add the sugar, salt, and vanilla. Stir to combine
  • Add the milk and cream. Stir to combine and then pour into the ice cream maker.
  • Churn according to the manufacturers instructions. Transfer the finished ice cream to an airtight container and place in the freezer until ready to serve.
  • To make this recipe even simpler, place all ingredients for this recipe in the blender and puree to combine before pouring directly into the ice cream maker to churn.

    The result is creamier ice cream without as many little berry pieces. I prefer the berries mashed over pureed, but both methods create delicious strawberry ice cream.

    • Changing the consistency If you want soft serve ice cream, you can eat it right out of the blender. It will be soft and creamy at that point. However, if you want ice cream that is a bit more frozen, you can place it back in the freezer after processing the ingredients. It takes a couple of hours to freeze up.Keep in mind though, there are no preservatives in the ice cream, so it will freeze up rock hard. Its simple to soften just remove it from the freezer 10 minutes before you want to serve it.
    • Always use ripe bananas when you make this treat. If your bananas arent fully ripe, the ice cream wont be sweet enough.
    • Using a regular blenderIf you dont own a high powered blender or a food processor, you can use a traditional blender. But, the consistency will be better if you cut your bananas into slices before you freeze them.

    It is a simple mixture of cream and yogurt that is loaded with fresh fruits and nuts.

    It is an instant dessert, that you can make just in 10 minutes. But dont forget to chill it before you eat, because it tastes the best when chilled.

    I have used almonds, cashews and pistachios, but you can also use walnuts and other nuts of your choice.

    This recipe is best served fresh. But it will last for about 2-3 months in the freezer. If you keep it in the freezer, be sure to store it in an airtight container.

    When ready to serve, let it sit at room temperature for about 15-20 minutes to thaw slightly then mix it up a little in a blender or food processor to give it that creamy texture.

    We Made Strawberry Banana Ice Cream

    Strawberry Banana Ice Cream is one of our favorite combinations. The flavor of the two make the perfect ice cream. If you are wanting soft serve ice cream, then you can eat right out of the blender.

    But it is just as easy to place the fruit blended ice cream in a container to freeze. It will take about 2 to 3 hours to freeze the ice cream. I like to make it the night before and then we freeze it overnight.

  • Whipping Cream.
  • Fresh Fruit. In this case, fresh raspberries!
  • Vanilla or other add-ins – optional of course!
  • It is ready to devour in just a few hours and it’s deliciously, OH EM GEE sin-worthy! Most homemade ice creams start with an egg custard base and in the process, it requires lots of attention to get it right.

    So you save time, money and heart-ache making it the old-fashioned way. You can improvise and add whatever fruit flavors you want. Summer and fresh fruit are meant to be together!

    Start by preparing those juicy fruits peel peaches, remove the leafy caps from strawberries, pit cherries, core a pineapple, you get the idea*.

    For fruits with a thick skin like cherries, or fibrous flesh like mango, purée with an immersion blender before getting started.

    *For this style of syrup, avoid fruits with a moisture content below 80%, such as bananas and figs . It’s not that they can’t be used in a ripple, only that they require a different technique, which I won’t be touching on here.

    Tender fruits like peaches, blueberries, and blackberries can simply be mashed into a purée with the other ingredients .

    To minimize the sweetness of the syrup, it helps to start with lightly toasted sugar, since it tastes less sweet than plain. Of course, a generous pinch of salt will go a long way as well.

    Otherwise, raw and semi-refined sugar styles can be a great way to reduce perceived sweetness if you have something that sounds like it will pair nicely with the fruit, such as jaggery and pineapple. For more info, consult our guide to raw sugars.

    I also recommend adding a splash of something acidic to brighten the fruit’s profile, which will seem duller once frozen.     How Long To Freeze Before Serving

    Check it for consistency and for the soft or solid-state you desire the homemade ice cream to be. For a more soft-serve mango ice cream, freezing for about 3 hours may be right for you.

    For a very solid ice cream ideal for scooping onto cones, you may need to go as much as 6+ hours of freezing before the mango ice cream is ready. I froze ours for 4 hours and it came out soft and creamy but just solid enough to scoop. DELISH!!!

    Which Fruits Can Be Used In This Recipe

    I have used strawberry, orange, apple, kiwi, grapes, banana, pomegranate, mango in this recipe, but you can add any fruits of your choice such as Chikoo, Raspberries, Papaya, Custard Apple, Cantaloupe, Black Grapes etc.

    Make sure to add seasonal fruits as much as you can, because they are fresh and also contains a lot of nutrition.

    You can also skip any of the fruits, if you dont like the taste and or its not available.

    Make this with whatever fruits are available easily.

    But for me, adding mangoes are a must in this, because its my favourite and it just enhances the overall taste of this dish.

    How To Make Fruit Ice Cream:

    • Blend the fruit. Place the frozen fruit and frozen bananas in a blender or a food processor.
    • Add the water. Then add in the water to the fruit.
    • Combine the mixture. Blend or process on high speed for a few minutes until the mixture is completely smooth.
    • Freeze the mixture. You can enjoy the ice cream as is or you can move the mixture to a freezer safe container and freeze for 2 to 3 hours to allow the ice cream to firm up if you prefer.
    • Enjoy the ice cream. Then the ice cream is ready to serve and enjoy!
