A few months ago I reconnected with an old friend I met during my MOPS days Anyway, Kim is a Registered Dietitian and is SO. DARN. SMART. One of my favorite things in life is listening to, learning from, and celebrating intelligent women in their element.

I am in awe. I bow down. Who runs the world? We all know the answer to that question. )

During our catch up over coffee, Kim and I started discussing ways we might be able to work together and the topic of an eCookbook for her clients came up. She supplies the recipes/concepts, and I fine tune then photograph them. Ill let you know when its available through her program the dishes are fantastic!

One concept Ive learned about and adopted through writing the eCookbook, is eating vegan until dinnertime. Translation: consuming tons and tons of vegetables, gluten free whole grains, and beans for breakfast, lunch, and snacks in between. In so many forms and combinations it is almost impossible to get bored! Salads are of course part of the program, and one way to jazz up an enormous, vegetable-based salad is drizzling it with 3 ingredient Oil Free Honey Mustard Salad Dressing.

Think salad dressing has to contain oil? Think again! This flavor-concentrated dressing takes 60 seconds to make and will transform the way you eat salads.

Make Your Own Salad Dressing

Dressing being poored into a glass pitcher

Bottled salad dressings are my pet peeve the majority of them are full of sodium, sugar and other preservatives. Whether you like a vinaigrette or the creamy stuff, you only need a few simple ingredients to make some yourself.

Dressing Basics

There are endless rows of bottled dressings at the grocery store. Depending on the kind, they are usually high in fat, sugar or both and they all have too much sodium. You may think its wise to opt for the lower-calorie offerings but light and low-fat dressings often have even more sugar to make up for the lack of flavor.

To ensure youre getting real ingredients, homemade is the way to go, but watch those portions. A vinaigrette may seem lighter but most are made predominantly from oils, which offer heart-healthy but unavoidable calories. Keep serving sizes to a tablespoon. You can store most homemade dressings in the fridge for up to a week .

A Simple Vinaigrette

Just join some sort of acid, oil and flavorings and ta-da! you have salad dressing! You can use vinegar or citrus juice for your acid. For oil, choose extra virgin olive oil if you want some olive flavor or canola or grapeseed oil if you want something neutral. Turn up the flavor with minced shallot or garlic, fresh or dried herbs, cumin, paprika or mustard all those add minimal calories. Try orange juice, honey, jam or maple syrup for a touch of sweetness.

Ditkoffs favorite salad dressing is a balsamic-Dijon dressing that she makes at home in minutes using just a handful of ingredients: 1/2 cup extra virgin olive oil, 1/2 cup balsamic vinegar and 1 teaspoon Dijon mustard, plus salt and pepper to taste. Not only is it easy to control the quality of ingredients and EVOO used, but it is also so much cheaper to make your own dressing, Ditkoff said.

As a store-bought alternative, she recommends Stonewall Kitchens olive oil and balsamic dressing. It only contains four ingredients and it tastes great on almost any kind of salad or as a marinade for chicken, she said.

What Ingredients Do I Need For These Dressings

Below, Im sharing fifteen of my favorite simple, easy, and healthy salad dressing recipes that you can make at home. Honestly, you probably have most of the ingredients to make most of the dressings already in your pantry and fridgethere are no fancy pants ingredients that youll have to track down at a specialty store.

For most salad dressings, youll need:

  • Something acidic. Lemon juice, lime juice, balsamic vinegar, red wine vinegar, apple cider vinegar, or white wine vinegar are all good choices.
  • Some fat. Oil is a standard ingredient in most vinaigrette-style dressings. With a few exceptions , you want a mildly-flavored oil that wont stand out in the dressing. Extra virgin olive oil or avocado oil are my favorites.
  • Something sweet. A little sweetness can bring all the flavors together and round out the dressing. Honey is my go-to, but maple syrup, agave, or even a bit of granulated sugar will work as well.
  • Salt, pepper, garlic, and other herbs and spices. Salt and pepper will enhance the flavor of the other ingredientsdont skip them where they are called for!

All of these recipes can be made using the jar-and-shake method. Just grab a jar with a tight-fitting lid , toss in all the ingredients, and shake the dickens out of it until its well-blended. There are a couple of recipes below that could be made smoother if you use a food processor or a blenderbut you dont have to if youre fine with a chunkier dressing.

How To Make This Greek Yogurt Ranch Dressing

While I am a fan of blending dressings with a blender, immersion blender or mini-prep food processor, we loved the more rustic texture of the ranch dressing when it was whisked together by hand.

Simply combine all the ingredients in a bowl and whisk them until they are completely combined. Make sure that if you are using granulated sugar that they are dissolved and that the buttermilk powder is not clumpy.

Olive Gardens Signature Italian

The second dressing, Olive Gardens Signature Italian, is slightly cleaner, but is still full of problematic ingredients:

Again, we see soybean oil, sugar, eggs, and dairy products , and that sneaky natural flavor. Oh yes, and the vinegar is white vinegar, most of which comes from GMO corn.

Both dressings contain dairy, which is high in heart-attack promoting saturated fat. Dairy also contains the protein casein, which has been shown to stimulate cancer development in rodents, increase the risk of heart disease, and may contribute to immune dysregulation and digestive problems. Additionally, most of the worlds human population lacks the genetic adaptation to digest lactose, the primary milk sugar.

And check out the sodium contents of the two dressings. Just two tablespoons of ranch give you 260 milligrams of sodium, while the same amount of Italian delivers a whopping 540 mg. Just that little bit of Italian dressing uses up a fourth to a third of your total healthy sodium allowance. Whats the problem with excess sodium? Too much salt in the diet causes high blood pressure, heart disease, kidney disease, and can lead to type 2 diabetes.
