Its not often you hear a vegan diet and a ketogenic diet in the same sentence.

Having tried both these dietary lifestyles before, I will be the first to admit how difficult it is to find desserts and treats which are both keto and vegan.

Vegan desserts? Sure, that is easy.

Keto-friendly desserts? Sure, that is easy too.

Keto-friendly AND vegan-friendly desserts? Now that is a little bit more difficult

or so I thought!

When I first tried out ketogenic desserts, I was a little bit overwhelmed by how much dairy was used.

As someone who doesnt eat eggs or dairy, I was quite limited.

However, I soon found ways to create dairy-free and eggless ketogenic desserts, using various nut butter, chocolate, seeds, and coconut products.

Ingredients In Keto Dump Cake:

Blueberries – The star of this keto dessert, lower in carb, and full of nutrients. We’re using frozen blueberries in this recipe but you can use fresh blueberries if you like.

Granulated Sweetener – We like to use Lakanto or Swerve. Both the white and golden granulated sweeteners work in this recipe.

Lemon Juice – Lemon works really well with blueberries. It adds a little acidity, flavor, and really helps pull everything together.

Coconut Flour – For flavor, we’re using a combination of nut flours.

Almond Flour – We’re using both almond flour and coconut flour to help with texture as well.

Baking Powder – Adds a little bit of leavening agent.

Ground Cinnamon – For flavor. Believe it or not, cinnamon goes really well with blueberries. Think blueberry cobblers and crisps!

Salt – For flavor and to help enhance other flavors.

Butter – For flavor, texture and to help soften the almond flour and coconut flour.

Lime And Gin Coconut Macaroons

Unlike macarons, macaroons are big, chewy, and easy to make.

You need not mix any egg whites to stiff peaks. Just mix the white with sugar, gin, lime zest, salt, and optional almond extract until it is incorporated.

Fold through the coconut and drop onto a greased baking sheet, or onto individual baking wafers.

When baked and cooled, dip the bottom in a dairy-free chocolate of your choosing for a super simple but super tasty little snack.

As far as cheesecake bites go, these are pretty impressive.

Not only are they a beautiful color from the fresh strawberries, but they are packed with flavor.

I love the gluten-free crust here, with dates, pecans, and coconut, but you can always use a biscuit base made using vegan butter.

The filling just needs all five ingredients blended until smooth and poured over the crust.

Theyre super cute as minis, but would also work as a tray and cut into slices.

The only thing missing is a drizzle of dark chocolate or some chocolate shavings.

I would not make you wait for this one!

Youll need an ice cream maker, but with Christmas coming up, I suggest adding one to your list. There is nothing like homemade ice cream.

This ice cream is made using soaked cashews and is blended with brown sugar, agave, coconut milk, and coconut oil.

The good news is, its as simple as blending everything until completely smooth.

For the cookie dough, you can always substitute almond butter, or use your favorite vegan cookie recipe in place of the peanut butter chocolate chip version used here.

Either way, it will be creamy and sweet, and you wont even know its dairy-free.

Making your brownies dairy-free is pretty simple. By substituting butter for oil, you can keep them moist and delicious but cut out the dairy.

These brownies come together easily and will bake up to be fudgy and chocolatey.

They do still contain eggs, though. So if you want to go full-vegan, try these banana brownies!

The banana flavor will be faint, and they add sweetness and moisture.

How Do You Make Almond Cream Its Simple

  • Take raw, blanched almonds and place them in a large glass bowl or jar.
  • Bring a pot of water to a boil and pour it over the almonds.
  • Let them soak in the hot water for 2 hours.
  • Drain the water, rinse the almonds using a mesh strainer and shake off the excess water.
  • Place the almonds in a food processor and blend smooth.
  • Add liquid and blend again and there you have it! Thick and lovely almond cream!
  • Thats pretty much how you make the dreamcake filling. Just blend everything together! Add in the sweetener, extract, and coconut oil to hold it together, adjust to taste, and youre done. Easy!

    Do you HAVE to soak the almonds??

    Thats a good question! I recommend it so that the texture is as smooth as possible.

    BUT, if you have a high power blender, it may work just fine without the soaking, just like I did with my Berry Blender Mini Cheesecakes!
