Easter Surprise Eggs | Rice Krispies Treat Recipe | Story Time Snacks

In a large pot over medium heat, melt 3 tablespoons of butter.

Add mini marshmallows to pot and stir to melt and incorporate with butter.

Remove pot from heat.

Add rice krispie cereal to your melted marshmallow mixture and mix well.

Press the cereal mixture into a 9×13 pan or a baking sheet covered in parchment paper.

Using a rubber spatula, press the cereal firmly and evenly.

When the mixture sets, carefully lift parchment and cereal from pan and place on flat surface.

Cut out egg shapes as close together as possible.

Place egg treats on a wire rack.

Now its time to melt your chocolate. If you have a double boiler, you can use that.

If not, fill a large saucepan with water and place a glass dish filled with the white candy melts in the saucepan. Heat on medium-low heat and stir occasionally until the chocolates melt.

Make sure you dont get water in the chocolates as it will cause the chocolate to seize up and become clumpy.

Once your chocolate is melted, you can separate your melted chocolate into different bowls based on the desired color you want each bowl of chocolate to be and how much you want of each color.

Prepare the colored melting chocolates by adding drops of food coloring until desired tint is achieved.

Prepare the colored coconut by adding 2 cups coconut to a canning jar and ¼ tsp green gel food color. Place lid on jar and shake vigorously. Add more color if desired.

Quickly add candies, coconut, and sprinkles. Place on wire rack until chocolates set.

One of my favorite things about this easy Easter treat is that you can totally make these treats the way you want them.

Love pastel colors? Make your egg a pastel masterpiece! Are bright colors your thing? Use a variety of food coloring and candy to create bright festive Easter treats.

Its no secret that everyone loves traditional rice krispie treats and these Easter Egg Rice Krispies make a super fun Easter dessert that everyone will love.

For Each Color Youll Need:

  • 2 1/2 ounces marshmallows
  • 1 tablespoon salted butter
  • 1 1/4 cup Rice Krispies cereal

Place the marshmallows and butter in a greased, microwave-safe bowl. Microwave for 45 seconds. Stir until very smooth, adding 15 seconds more in the microwave if needed.

Add a few drops of food coloring and stir well.

Thoroughly stir in the cereal.

With fingers coated in cooking spray or rinsed with water, slightly overstuff both sides of an egg with the mixture. Press the egg together and snapped closed.

TIP: Fill the eggs first, wash your hands, and then snap the eggs together.

Repeat with the other two colors of food coloring.

Chill the eggs about an hour and carefully remove from the plastic eggs.

Rice Krispies Easter Egg Treats with a Chocolate Surprise!

Lets get the kids involved. More hands will make the process go quicker. Plus, kids just love to be involved. You can even pretend to have your own little kids baking championship event.

My kiddos always seem to be around to help me out with meal planning and prepping, too.

First, you will want to melt the butter with the marshmallow in the microwave for 45 seconds. When melted, stir until completely combined. It will look like a sticky mess.

Divide your mixture into different bowls. In each bowl, stir in 3 drops of desired gel coloring.

Then add in your rice krispie cereal to this mixture. Continue to stir until well combined.

Next, spray your plastic Easter eggs for the cooking spray. Then add your rice Krispie mixture to the plastic mold. Close the plastic egg and let sit for 10 minutes. Remove and set aside.

Continue to repeat these steps in alternating colors until you are out of rice krispie mixture. This recipe should make about 20 Easter Eggs.

These adorable Easter Eggs are simply Rice Krispies treats molded into the shape of eggs using a plastic egg. Eye-catching to both children and adults, they only take half an hour to make, especially if you have a few extra hands in the kitchen to help.

Recipe Tips And Tricks

  • Spray a sheet of wax paper the size of your pan with cooking spray and use it to gently spread and press the treats evenly in the pan.
  • Maintain a low cooking heat for melting the butter and marshmallows. This will help keep the chewy consistency of the treat. If you attempt to increase the heat, your treats will likely be on the tough side. This is what helps you achieve the gooeyness of the treats.
  • To help speed up the melting process, it may help to slice the butter in small pieces.
  • Do not over press the treats when placing them in the cake pan. Over pressing will cause the treats to be harder than desired.

Making the actual Rice Krispie part is super quick and easy.

Just microwave the butter and marshmallows, mix in the cereal, press into a muffin tin greased with cooking spray, and let it sit for 30 minutes or so. Then you pop them out and decorate!

I love getting the kids involved with decorating the easter rice crispy treats. They have so much fun helping in the kitchen! I usually pipe the frosting, but I let them count out three candy eggs and put them on top.

Frosting Tip: An easy piping method is to put a dollop in the center, and then pipe around it. I typically use a star dip, but its totally up to you!

Can I Use Colored Candy Melts

Want to mix up your colors? Go ahead! We chose to do white candy melts to contrast the colorful eggs and show off the fun sprinkles but if youd like to use colored melts you sure can! You can use whatever fun colors youd like! Some dont melt as smoothly as others so if you need to you can add about a tsp of shortening to your melts to get a nice smooth dippable texture! Also if you want to color white candy melts make sure you have oil based food coloring so that your chocolate doesnt seize.

Gluten Free Rice Krispie Easter Egg Treats

Unfortunately, Kelloggs cannot guarantee that Rice Krispies are gluten free, due to the malt listed in the ingredients.

Malt is sourced from a couple of different things, but when it is sourced from barley, it is off limits for those of us with a gluten sensitivity or allergy.

Since they cannot guarantee where the malt is sourced from, Kelloggs does not certify Rice Krispies as gluten free.

If you are looking for a gluten free crispy rice cereal alternative, youre in luck! There are a few to choose from: Erewhon Organic Crispy Rice cereal is a favorite in our house.

Its also free of gluten, dairy, soy, and tree nuts. More gluten free crispy rice cereal options are: Natures Path Crispy Rice Cereal, and Back To Nature Crispy Rice Cereal.

The good news for Peeps fans, according to the manufacturer, Just Born, is that some varieties of Peeps are indeed gluten free!

Make sure you always check the package, first. If they are gluten-free, it will say so near the nutrition label and list of ingredients.

Printable Recipe For Easter Egg Rice Krispie Treats

Directions:

  • Line a 9×13 baking dish with parchment or wax paper.
  • Add the mini marshmallows and butter to a large saucepan or dutch oven and heat on medium-low heat, stirring occasionally.
  • Once the mixture is about 3/4 melted fold in the Rice Krispie cereal until it is completely coated.
  • Pour the mixture into the prepared baking dish and gently press down.
  • Place the Rice Krispie Treats in the fridge for 30 minutes.
  • Line a baking sheet with parchment or wax paper.
  • Remove the treats from the fridge and use the egg shaped cookie cutter to cut out each treat and place them on the prepared baking sheet.
  • Divide the white icing between the ramekins and add 1-2 drops of food coloring to each dish and mix.
  • Scoop each colored icing into a small sandwich baggie. Snip a small amount of each baggie corner so you can decorate the cookies.
  • Outline each Rice Krispie egg with your choice of colored icing and let the outline set.
  • Flood the inside of the outline with the same icing color and use the toothpicks to gently fill in each egg. Let the colors set.
  • Once all the eggs are frosted, use the remaining colored icing to decorate the eggs with stripes and dots.

  • Then, instead of transferring the mixture to a pan to cool and then slice, youll grab spoonfuls of the mixture and shape it into an oval egg shape.
  • I think this is best done by using your palms to cup the mixture and pack it into an egg shape.
  • Be sure to spread some softened butter over your hands so that the Rice Krispies dont stick to you. Youll need to reapply every few eggs as you go.
  • Place the eggs on a piece of wax paper to cool slightly before decorating.

Absolutely! These fun Easter eggs can be filled with all kinds of fun Easter treats like jelly beans, chocolate eggs, or any other small candy. To fill them youll need to make two hollow egg halves, fill them and then press them together. You can do this using your hands, and shape them that way, or you can use plastic Easter eggs as molds and press the cereal mixture into each half, fill and then press them together. Make sure to butter or spray with nonstick cooking spray the inside of your plastic egg before getting started! Make Royal Icing For Peeps Crispy Rice Easter Egg Treats

Royal icing is just the best! It covers bumpy mistakes, and dries smooth and professional looking. I do not have patience or skills for fancy decorating, but these always turn out looking better than I deserve!

I used Imperial Sugars recipe. They have the standard Royal Icing recipe that uses raw egg whites, but also a version that uses powdered egg whites instead, in case you are not a fan of eating raw eggs.

We followed the directions, and beat the mixture for nearly 9 minutes.

The kids and I took turns holding the hand mixer. We separated it into 3 different bowls, and added yellow, pink, and purple food coloring, trying to mimic the original color of the Easter candy we used in the Peeps rice krispie egg treats.

Royal icing hardens fully in a few hours. Unfortunately, not many of ours made it that long because my kids ate them. At least I have photographic evidence that they once existed!
