Baked Spinach & Artichoke Dip with Homemade Tortilla Chips

I love finding new appetizers to wow my friends and family with, especially if they are easy and ridiculously delicious! I know we all feel like rock stars when we find the dish that everyone just raves about and for us, its Layered Nacho Dip. Now I have to make it for every get-together and Im totally ok with that! I love how I can make this dip as spicy as I want with a hot or regular taco seasoning mix and medium, mild or hot salsa. This Layered Nacho Dip is an absolute must on game days, family game nights, and Cinco De Mayo festivities.

How To Make Chip Dip

Begin by adding a flat layer of corn tortilla chips into a pie dish. Allow them to overlap slightly to close up major gaps. This prevents the next layer, the soup, from seeping through.

Add one can of Campbells Cheddar Cheese Soup. Its considered a cooking soup rather than eating soup. It adds cheesy flavor, and as the dip bakes, the soup turns creamier and gives the dip more pizazz.

Sprinkle on one packet of fajita seasoning mix. If you cant find fajita mix, most any kind of taco seasoning mix in a packet will work.

Then sprinkle on not quite half of one 8-ounce bag of shredded cheese, before topping with cream cheese.

Top with your favorite salsa and the remaining cheese. I used mild salsa because my hand model was partaking, and shes not a fan of four alarm fires, but use whatever heat level you prefer.

Bake until its golden, bubbly, and your house smells like a Mexican restaurant.

Tortilla Chip Dip How To Make

First, in a large pot, brown the ground beef and drain off the excess fat.

Next, add the salt, pepper, onion powder, and minced garlic to the beef.

Then, add in the salsa, beans, and sour cream. Cook over medium heat until it comes together evenly.

Finally, add in the shredded cheese. This is definitely not a low fat meal. It will take about 10-15 minutes for all the cheese to melt. You know the dip is ready when you can stir it without any cheese strings sticking to the spoon.

Serve hot with tortilla chips and any toppings youd like.

How To Make Hot Bean Dip

I always mix everything together in a large casserole dish or 13 x 9-inch baking dish. Why dirty extra dishes if you don’t have to?!

Just mix the refried beans, softened cream cheese, sour cream and salsa together until well blended and creamy. There’s plenty of flavor here, so I don’t add any taco seasoning, although you can if you want.

Then, stir in some shredded cheese. Smooth the top so it’s nice and even.

Finally, sprinkle more shredded cheese on top. I use Mexican blend cheese, but you can use cheddar or whatever you prefer.

Now, pop the dish into your oven and bake for about 30 minutes or until hot and bubbly. You can sprinkle on some chopped cilantro for a pop of color if you want!

The bean dip is super hot right out of the oven — ask me how I know! So, let it sit for a few minutes before digging in.

It’s really best served warm. Not too hot, not cold — just right!

My taste testers say Fritos work best for digging in deep and scooping this cheesy dip up — no soggy chips here!

Tostitos Scoops are good, too! But really, any chip is fine.

Its a little tricky to spread the cream cheese evenly over the shredded cheese without disturbing it, so its important your cream cheese be very well softened to room temp, which makes this easier.

Also, make sure youre using brick-style cream cheese and not the whipped kind that comes in a tub. Brick-style cream cheese is much thicker and creamier and makes for a super hearty dip thats easy to scoop up onto a chip.

A few readers have said they used flavored tortilla chips to make this chip dip . I used plain corn tortilla chips to make my cream cheese salsa dip, but flavored chips are a great idea too!
