Smothered Chicken and Gravy With Mashed Potatoes |Easy Weeknight Meal|

While your chicken is cooking, throw your baby potatoes in a pot of boiling water and cook until fork-tender, about 20 minutes. You want the potatoes to easily be punctured by the fork but they shouldnt fall apart at the touch. When the potatoes are done cooking, drain and add in milk, sour cream, butter, and salt. Mash until you reach your desired consistency. We like ours somewhere between chunky and creamy.

This chicken and gravy over mashed potatoes is a delicious comfort food that is perfect for your next family dinner. I love having several easy chicken recipes that are flavorful and comforting.

There are quite a few ways to make it, but this is our favorite because its gluten-free and it has just the right amount of seasoning for us.

Some people make it with cream of chicken soup or cream of mushroom soup.

I started to make it with gluten-free cream of mushroom soup, but I decided to use chicken stock and some of my own favorite seasonings because its just as easy.

I also made it in the slow cooker, but you dont have to. Its just as good on the stovetop or in an Instant pot. Since I was making a small amount, I used my small Crock Pot.

The reason I made it in the slow cooker was that I had to run a few errands, and I thought it would be nice to have it ready for me when I got home.

Although I served it with mashed potatoes this time, it also goes with rice or noodles. Whether you can eat gluten or have to go gluten-free, this version tastes wonderful.

Chicken and Noodles is a comforting family favorite pioneer recipe. Its made with homemade egg noodles, a few simple ingredients, and served over mashed potatoes.

Im posting this Chicken and Noodles recipe in honor of my Grandpa Nip who passed away two weeks ago. This was one of his favorite meals. Ever since my grandma passed, my mom has been making it for him for special occasions like Fathers Day and his birthday.

Food has a way of helping us remember people, feelings, and/or events. This Chicken and Noodles will forever remind me of this hard working, ice cream loving, skiing, smart, patriotic, devout Christian man who would stick me up on top of the fridge every time he came to visit when I was little. Im so grateful to have such a wonderful grandfather and for all the good memories with him.

Whats The Difference Between Chicken And Chicken Bouillon Cubes

Chicken bouillon cubes are chicken stock that has been dehydrated to be stored for long periods. Chicken is just chicken theres no real difference between chicken broth and chicken any more than a difference between chicken broth and beef broth. If you want to substitute one for the other in chicken recipes, reduce or increase the amount of salt you add accordingly if theyre not made with the same amount of salt as your recipe calls for.

Can I Use Yellow Mustard Instead Of Dijon Mustard

Honestly, I haven’t tried it. I feel as though dijon has better flavor, is more creamy, and has a touch of spice – making it perfect for the cream sauce.

Yellow mustard is also bright yellow, so the color of the sauce would change, as well. I would recommend trying spicy brown or stone ground over yellow mustard. But, if you’re in a pinch, I understand.

If you do use a different type of mustard, add a small amount then taste test the sauce. Add more as needed. As well, if someone in your house isn’t a big mustard fan, you can follow the same rule – only add a small amount and do a taste test. The sauce will still be flavorful!

Instructions For Making This Recipe

First, if you plan to make homemade noodles, begin preparing the noodles 3-4 hours before your mealtime, to give the noodles time to dry. See my recipe for Homemade Egg Noodles Here.

Gather the ingredients. Prepare the chicken. Remove giblets from inside of chicken. Place chicken in a large stockpot or Dutch oven and cover with water.

Sometimes when I make this recipe, Ill use 6-8 chicken thighs with bone and skin instead of the whole fryer chicken. This works well, too.

Using a cutting board and Chefs knife, prepare the vegetables. Peel and slice carrots into bite size pieces. Chop celery and onion.

This Pan Fried Chicken is easy and fast especially if you are short on time. I usually cut the chicken breast fillets into thinner slices so that it can cook faster. Then I dredge the chicken by coating the chicken with flour mixture to absorb more flavor from the oil or butter and improve the texture as well as color from the coating.

Although there are gluten-free flours and soup alternatives, theyre not always easy to find at the grocery store. So I worked on this gravy recipe to deliver all of the creamy goodness but without the gluten.

Since I want everyone to be able to enjoy this mealnot just those who follow gluten-free dietsI test everything on my husband who can eat anything he wants. He gave this a two-thumbs-up, meaning he really likes it. A lot!

Here are the simple ingredients youll need for this yummy chicken and gravy recipe:

  • Boneless skinless chicken breast
  • Chicken broth
  • Cornstarch
  • Dry ranch mix
  • Salt and black pepper

Since the ranch mix has a lot of salt, if you add it, decrease the amount of salt youd normally use.

You can substitute heavy cream for the sour cream if you want. Or you can use plain yogurt that has a similar flavor to the sour cream. If you want a slightly thicker gravy, you can use cream cheese.

How To Make Creamy Lemon Chicken

  • Start by marinating your chicken. It is such an easy step and makes a huge difference in the flavor! I use a mix of herbs, spices, lemon, and Better than Boullion for an extra punch of flavor. You can marinate the chicken for anywhere between 15 minutes to overnight . The longer, the better, of course, but I usually marinate it for about 30 minutes while I get the ingredients ready for everything else.
  • Use the same pan you fried the chicken in to make the creamy lemon sauce. That added flavor creates more dimension to your dish.
  • Squeeze in as much lemon as you prefer. I usually like about 1 ½ large lemons in mine, but you may like less, or even more.
  • Be careful seasoning your sauce! The best time to salt your sauce is near the end, after the sauce has a chance to incorporate the flavors from the fried chicken, the Better than Boullion, and the lemon. I find if you try and start salting too early, you can accidentally end up over salting and no one likes a salty sauce.
  • Add some parmesan if you want! Always go for the real stuff, and always add a little at a time. Not everyone in my family likes it with parmesan, so I usually let everyone add theirs onto their own plate.

Chicken And Mashed Potatoes

  • Add the chicken back and the bell pepper and mix everything well together.
  • Taste to check seasoning and simmer for 2 minutes.
  • Turn heat off, spread mashed potatoes on top. Level with the back of a spoon. Take a fork and make some lines or decorative circles on top.
  • Place the skillet in the middle rack of your oven and bake for 45 minutes or until top is golden brown.

Prepare The Sauce And Noodles

With an immersion blender, puree broth. Stir in 1 cup of whole milk. Return sauce to a boil. Add noodles and cook 15-20 minutes until tender.

While the noodles cook, remove skin and bones from chicken. Once the noodles have finished cooking, add chicken to the noodles.

If desired, thicken further by whisking together 1/4 cup flour with 1/3 cup remaining milk and stir into broth.

For the finishing touch, add butter to the noodles and stir to combine. This recipe will serve 6-8 people. Serve Chicken and Noodles over Mashed Potatoes when youre in need of more than food ~ Food for your Soul.

Why Does Chicken And Mashed Potatoes Recipe Reheat Poorly

Mashed potatoes contain a lot of starch. If theyre not carefully prepared, they can end up tasting dry and grainy even when freshly made. To avoid this make sure you cook them thoroughly, not under or overcooked. Letting them sit for too long after cooking also leads to the same problems as most starchy foods do they harden up and become less than tasty when reheated.

How To Make Chicken & Noodles:

Recipe
  • Place chicken, onion, and salt in a 4-5 quart dutch oven and cover with water .
  • Bring to a boil, turn down to low, cover, and simmer for 15 minutes or until cooked through.
  • Take pot off stove. Remove chicken and allow to rest until cool enough to handle. Discard skin & bones and shred into bite size pieces.
  • Strain the broth into another large dutch oven or bowl.
  • Place broth back in dutch oven . Add more salt to taste. Bring to a boil.
  • Add the noodles to the boiling water and cook until almost al dente, about 3-5 minutes for fresh noodles and 8-12 for dried . Remove from heat.
  • Add the shredded chicken back to the pot.
  • Serve over mashed potatoes .

    How To Cook Gravy For Mashed Potatoes

    To make the mashed potato gravy, use the same pan that you fried your chicken in and toss in your peppers and onions. Youll want to saute these until soft. Then add in your mushrooms and cook until soft and golden brown. Thoroughly mix in your seasonings and follow with the butter and flour to make a roux*. Finally, add in your heavy cream and chicken broth and let it simmer until thickened to a gravy consistency.

    How To Make Crockpot Chicken And Gravy

    First, place chicken breasts in the pot. I used one of my smaller slow cookers for this, so the chicken overlapped a little bit.

    Next, sprinkle the garlic powder and onion powder evenly over the chicken.

    If you use the ranch seasoning mix, add that now.

    In a small bowl, combine the chicken broth and cornstarch.

    Whisk it until all of the cornstarch dissolves.

    Pour it over the chicken.

    Make sure the chicken is covered.

    If you want salt and pepper, add it now.

    Cover the slow cooker pot and cook it on low for 7-8 hours. I actually started mine out on high for one hour and cooked it for 6 more hours. One of the many good things about slow cookers is the flexibility of time.

    After the chicken is done, remove it from the pot for shredding.

    Its super easy to shred chicken with 2 forks or a pair of meat shredder claws.

    You can also use a potato masher for shredding chicken by pressing and twisting the masher.

    Scoop the chicken back into the pot and add sour cream.

    Stir it until it is mixed into the gravy. The gravy mixture should have a very creamy texture.
