Preheat oven to 400° convection or 425° conventional.

Trim pork chop of the fat rim. Pat dry with a paper towel.

Prepare two trays. First, with one egg whipped with a teaspoon of water. Second, with ¼ cup of Italian Panko Bread Crumbs, ¼ cup flour, 1 ½ teaspoon seasoning salt , and ¼ teaspoon black pepper.

Dredge a pork chop in the egg mixture. Be sure to cover all surfaces. Remove with a fork and allow to drain for a moment.

Dip the egg-coated chop into the flour mixture. Coat all sides, remove with a fork and shake to remove extra flour.

Set the chop on a plate or chopping board. Repeat for the next chop. We want to coat to set up for a few minutes.

Over medium-high heat, add 2 tablespoons of oil to an oven-safe, non-stick skilletcast iron preferred. When hot and the oil is shimmering, move the chops to the pan with a fork.

Brown each side of the chop for 2-3 minutes until almost the final color you want. Use a fork to flip by poking the meat edge and not anything to grab the meat and pull off the coating.

Check the internal temperature, do one last flip of the pork, and place in the preheated oven until the internal temperature you want. About 10 minutes for 145°, but this will vary a lot in time, so you must use a meat thermometer and get the final temperature you want. You can always cook more but can not uncook meat.

Allow to rest on a plate for 5 minutes before cutting.

Oven Fried Pork Chops Preparation And Storage Tips

  • Prepare the breading mixture in advance, but do not bread the pork chops until just before baking.
  • Leftover pork chops will keep in the refrigerator in an airtight container for 3-4 days, or in the freezer for 2-3 months.
  • To reheat the pork chops: Preheat the oven to 350°F. Place pork chops on a baking sheet and warm just until heated through. Be aware that reheating the cooked pork may dry out the meat, so they are best when served fresh.

How To Keep The Breading Attached

The most important part of a bread coating is to have it stick. So here are the big secrets to getting a coating to stick.

  • Pat dry well with a paper towel. Things do not stick well to wet things.
  • An underlying coating of something with an egg.
  • Coat with something with some flour. When combined with the egg, it sticks well.
  • No bone if possible. When the meat contracts with cooking, the bone breaks the coating.
  • Cook in a well-oiled non-stick pan.
  • BIG SECRET #1: After coating with the flour mixture, set it on a flat surface like a cutting board or plate for about 5 minutes to allow the various layers to combine and adhere better.
  • BIG SECRET #2: Flip and move the least possible. Things like tongs will rip the breading. So use a fork and stab the edges.

    • Types of pork chops this recipe was developed and tested using boneless pork chops about 1 inch in thickness. It will definitely work with other types of pork chops , but youll need to do a little experimenting to see how long they need to bake. A meat thermometer is super helpful, and youre looking for the pork to be between 140-145°F in the center.
    • Breadcrumbs for this recipe, I use plain traditional breadcrumbs, but feel free to use panko instead.
    • Breadcrumb alternatives other great breading options are crushed cornflakes, crushed potato chips, crushed crackers, crushed pork rinds, etc.
    • Mayo-free if the idea of using a small bit of mayo as the binding agent is turning you off, feel free to use the traditional breading method. Dredge the chops in flour, then dip into eggs whisked with a little water, then coat with the breadcrumb mixture.

How To Make Baked Breaded Pork Chops

To make the whole process easier, prepare your baking sheet, place your ingredients in separate shallow bowls or pie plates, and place them in an assembly line on your counter.

You can season the bread crumbs in the bowl.

Then begin breading your pork chops. First, pat each pork chop dry using paper towels.

Then, dip pork chops into the beaten egg mixture.

Shake off excess beaten egg from the pork chop. Then, dip it into the seasoned bread crumbs mixture.

So, how do you get breading to stick to pork chops? The egg wash helps the breading to stick to the pork chops.

I also like to press the breadcrumbs into the pork. This helps it stick better.

Just don’t be tempted to pile too much breading onto the chops. The breading on top will brown, but the breading closer to the chops will be a little soggy.

I like to line the baking sheets with foil or parchment paper. But that’s optional. I’m just all about easy clean-up!

Spread about 1 teaspoon of olive oil or vegetable oil over the baking sheet. You just need enough oil to lightly cover the baking sheet. Or, spray it with non stick cooking spray.

This will help prevent the crumbs from sticking. If you apply a very light layer, the crumbs won’t get soggy!

Next, lightly spray the tops of the pork chops with cooking spray or olive oil spray. This helps the breadcrumbs turn golden brown as they bake. You can also drizzle melted butter over the chops if you want.

    What Pork Chops To Choose

I suggest a ¾ to 1-inch boneless center-cut chop. But any real pork chop will do, which are any of the center three in the diagram.

With a breaded chop, you don’t want to hide a chunk of fat under the breading somebody might try to eat, so trim off that fat rim.

The bone can lead to the breading falling off some since the meat contracts during cooking. Then the coating is more likely to come off a bit.

Thickness is important. Thin will cook rapidly and may not even need the oven part of this recipe. Thick pork chops will be the same amount of time on the stovetop but may take up to 20-25 minutes in the oven.

How Long To Bake Pork Chops

How long meat need to bake depends on the thickness, as well as whether or not it is bone in. Pork needs to be cooked to an internal temperature of 145 degrees F. A good guideline is 16 minutes at 350 degrees per half inch thickness for boneless.

I love the just toss them in the oven simplicity, but the breading would be even crispier if you seared them for 2 minutes per side in a skillet over medium high heat. If you sear the meat before, reduce the baking time by 4 minutes.

If you use bone in, you may need to add a few minutes to the cooking time.

    Storage & Reheating Tips

Brined & Breaded Baked Pork Chops

Leftover pork chops should be promptly refrigerated in an airtight container. Theyll keep in the fridge for three to four days or in the freezer for a few months. Thaw them overnight in the refrigerator before reheating.

The breading on reheated pork chops tends to lose its crispiness. The best way to reheat them is to put them in your air fryer for a few minutes or in the toaster oven until they are just heated through. Try not to overheat them they may become tougher and dry.

What Is The Secret To Making Tender Pork Chops

My secret is marinating in olive oil.

The marinade is used to make the meat tender and fragrant.

In this way the muscle fibres soften and absorb the smells and scents of the liquid.

Once you have prepared and poured the oil over the meat, massage the pork thoroughly with your hands so that it takes on a uniform flavour.

Then cover the dish with cling film and leave to rest in the fridge.

How To Test Pork Chops For Doneness

Breaded Crispy Baked Pork Chops with Mustard Sauce

To check the temperature, insert an instant-read thermometer into the thickest part of the chop . The thickness of a pork chop will determine its final cooking time, regardless of whether it’s boneless or bone-in. Chops typically range in thickness from ¾ inch to 1½ inches. The USDA updated its doneness guidelines in 2011, noting that pork cooked to 145 degrees Fahrenheit is just as safe as pork cooked to 160 degrees Fahrenheit. At this doneness, the pork is pinker than many people are used to, but the meat is juicier and more flavorful. If you’d rather, you can always cook your pork chop to the previous standard of 160 degrees Fahrenheit.

Bone-In pork chops require about 10% MORE cooking time, so make sure you factor that into your planning if you bought pork chops with bones. About Breaded Pork Chops

Easy Oven Baked Pork Chops (Juicy and Tender)

Why use buttermilk for a marinade? Buttermilk is slightly acidic and has enzymes which help tenderize the pork. Its a gentle marinade and it wont make the pork mushy if you want to marinate the pork overnight. Plus, a buttermilk marinade is very easy, just pour it on, nothing to mix up. I use a similar marinade for my easy baked chicken parmesan.

After the pork has marinated, remove it from the marinade and let the excess drip off. You dont have to wipe it off. The buttermilk that remains on the pork chops will help the breading stick.

Mix the breading ingredients together: panko, Parmesan cheese, chopped parsley, mustard powder, salt and pepper. Use a shallow bowl so you have room to dredge the pork chops in it. Press one chop at a time, both sides, in the breading mixture. Arrange them in a single layer on a baking rack set inside a baking pan .
