How To Make The Best Burgers

You are going to start by making a nicely flavored panade in a large bowl. Add the torn or cut bread pieces, milk, kosher salt, onion powder , black pepper, minced fresh garlic, Worcestershire sauce and Dijon Mustard.

Mash that all together until it forms a smooth paste, this is your panade.

Now add the ground beef to the bread mixture. With clean hands or a fork mix until everything is combined. You do not want to overwork your patty mixture or you will end up with tougher meatball-like burgers.

Divide the mixture into 5-6 equal potions. This will be five pound burgers or six ¼ pound burgers.

To form the patties I like to roll the meat into a look meatball shape and then press to flatten. You can also shape them in the palm of your hand.

Form each burger patty about ½-1 inch larger than your buns. This allows for some shrinkage on the grill. Then your burgers will fit perfectly in your buns.

Pro Tip: using your thumb or a small spoon make an indention in the center of each patty. That will prevent your hamburgers from completely shrinking into little hockey pucks on the grill.

You can grill your burgers right away or pop them in the fridge, covered, for a day or two.

If you choose to refrigerate the raw patties then place them on a baking sheet covered with plastic wrap. OR you can stack the patties with a little square of parchment paper between the patties so they dont stick together, cover and refrigerate.

Tips For Making A Butter Burger

The Mix: For the best distribution of the butter into the patty, freeze the butter beforehand, then grate it using the small grating surface of a box grater.

The Patty: Dont overly work or compress the patty. Doing so will make the burger have a tougher bite than youll enjoy. Spend as little time manipulating the burger into a patty shape as necessary.

The Buns: Use a pastry brush to lightly coat the buns cut side, before toasting them in the pan or on the flat top over medium heat.

The Cup: Using your thumb, press a small indent into the center of each burger. This will prevent the burgers from cupping during the cooking process.

How To Cook A Butter Burger

This isnt a burger I recommend grilling. Instead, I like to do these on the flat top or in a large skillet so the burger can cook in its own juices and that heavenly melted butter as the patty cooks.

Further, this style of cooking allows the burger to develop that incredible crust we all love AND can facilitate the perfect toasted buns.

How To Make A Great Burger:

  • What makes THIS burger a memorable burger is in the spices. Without them the burger can be bland and boring. There is a nice mix in this recipe. The cayenne pepper is not overpowering I promise. People freak out when they see cayenne pepper but I urge you to put it in these burgers.
  • I know the world is very concerned with lean beef and my next sentence may not be my most popular but I choose 80% ground beef when I make burgers. You see in order for a burger NOT to be a hockey puck it needs fat. Its just the way it is. However, if you go fattier than 80% then you run into the problem of there being TOO MUCH fat and the burger will shrink up like a meatball.
  • The next tip I have is to make a good EVEN sized patty. I divide the meat visually in 4 with my hands and then I roll the burger in my hands to form a large meatball. Then put it between wax paper and I lightly press down with my hand and then use a small skillet and apply even pressure to flatten it out. Works great every time!
  • Before putting the burgers on the grill let them come to room temperature for about 30 minutes.
  • These burgers have been in our family for probably 10 years or more. Maybe one day I will embark on another recipe, but for now these are OUR burgers and I am happy to share them with you!

    How Do I Make Cheeseburgers

Once your burgers are done to your liking, youare welcome to add cheese directly to the hamburger patties, or you can make mytoasted cheddar buns.

Irecommend a good melting cheese such as cheddar, American, pepper Jack, Swiss,or mozzarella.

Toadd cheese, place a slice of cheese on top of each patty then cover the skilletuntil the cheese has melted, about 1 minute.

If youre cooking your burgers on the grill, thenwait until your burgers are almost done, then add the cheese directly on top ofeach patty. Close the lid of the grillto melt the cheese.

    What Is A Butter Burger

Put simply, a butter burger is a burger patty made with butter either in the grind itself or on top of the patty. I prefer to put the butter in the ground beef myself. If youre going to put the butter on top be sure to use this .

I find its much easier to mix the butter directly into the patties with salt and pepper. See my tips below for incorporating butter into the patty.

How Do I Make Burger Patties

    • First, add an egg to a large bowl and whisk. We want to whisk the egg first because wewant to handle the mixture as little as possible.
    • Next, add ground chuck, panko, shallot, garlic,Worcestershire, oregano, smoked paprika, ground cumin, salt and pepper. Using clean hands, mix just untilcombined. Dont overmix or youll havetough burgers.
    • Divide the meat into 4 equal sections. You can use a kitchen scale to make sure theyare equal, but I just eyeball it.
    • Roll each section into a loose, big meatball, but dontcontinue to roll once it takes shape. We dont want it too compact or overworkedor youll have a hard burger.
    • Flatten the ball with thepalm of your hand. This will likely makethe edges crack, so just push them back together. Try and make the patties a little larger than your bun becausethey will shrink while cooking.
    • Make a 1/2 indentation in the middle ofeach patty with your thumb or the back of a measuring spoon. This will help theburgers cook evenly.

Can I Cook Burgers On The Stovetop

Steven Raichlen’s Great American Hamburger Recipe – Preparation

Yes! Most restaurants cook on a cast iron skillet. Heat the skillet over medium/high heat and add a high heat oil , adding just enough to lightly coat the bottom. Once the oil is hot but not smoking, add burger patty and sauté without moving it for 3 to 5 minutes per side the same way you would on a grill, cooking to a safe internal temperature of 160F.

    Creating The Pheasant Burger Recipe

    flame

Although I enjoy being outside in nature, building these moments in my life, the biggest reason I continue to hunt is for the meat to add to my freezer for the year. I knew I wanted to try pheasant in different recipes, but had to think of how best to prepare it. I found online different blogs for ground turkey and chicken recipes and thought to myself – why can’t I just substitute the turkey or chicken with the pheasant I brought home? Well, turns out I was right! Pheasant is just as good, if not better, than chicken and turkey.

During the summer I love to be outside, especially to grill. That was when I thought of a great recipe to use up some of my pheasant grilled feta and spinach pheasant burgers. These burgers have great flavor, are super simple to put together, and everyone enjoys them. I like them so much that when I saw a recipe contest from the National Wild Turkey Federation, I did not hesitate to submit my new, favorite recipe to them.

What Ingredients You Need To Make Homemade Hamburgers

The secret to incredibly juicy burger patties is the addition of crushed crackers or panko breadcrumbs to hold in the natural fat and juices.

We definitely recommend using crackers if you have them. Adding crushed crackers is an old-school method to add more flavor than plain breadcrumbs. Plus, its super handy for using up that package of crackers youve had sitting in the pantry for weeks.

Here is everything you need to make the best homemade hamburger patties:

    • Ground chuck We prefer an 80 lean/20 fat ratio for the juiciest burgers.
    • Crushed crackers or Panko bread crumbs The best binders for juicy hamburgers.
    • Worcestershire sauce Adds a deep beefy, smoky flavor.
    • Egg To bind all of the ingredients together without drying.
    • Milk The enzymes help to soften and tenderize the ground beef.
    • Seasonings: Salt, Garlic Powder, Onion powder, Pepper, or other spices of choice.

Its helpful to save prep time and add lots of flavor to your patties by adding dried spices rather than fresh herbs to the hamburger mix. For instance, you can incorporate red pepper flakes for a spicier burger, a bit of cumin and chili powder for a Southwestern-inspired bite, or parsley and dill to create a Mediterranean taste.
